Fresh Marinated Mozzarella with roasted Golden Beets
The fresh made marinated mozzarella is the perfect flavor combination to pair with roasted golden beets and freshly baked bread.
I used a fresh baked loaf of this No-Knead 5 Minute Artisan Bread as the base but you can buy a fresh baguette if you don't want to bother with baking homemade bread.

I followed all of the directions to a tee except I shaped the loaf of bread into a baguette instead of a boule and instead of baking it in a dutch oven I baked it on a pizza stone.
This delicious Herb Crostini appetizer recipe requires a little prep work., but it is so worth it!
You'll need to roast the golden beets, make the marinated mozzarella and bake the homemade bread (if your making it) early in the day before you plan on serving it. Want to add even more flavor? Use herb infused olive oil when you roast the beets.
Make ahead to save time
You could roast the beets the day before (which I did), slice them and store them in a container in the refrigerator before you need to use them. Your oven will be free to bake the bread if you decide to make it.
If you are making the No-Knead 5 Minute Artisan Bread you will need to prepare the dough the day before (which I did). Once you have the dough made and refrigerated it will only take 5 minutes to get the dough ready to bake. If that seems like too much trouble you could buy a fresh baguette at the store.
If you have ever eaten crostini you know the bread is lightly toasted. I decided not to toast the homemade bread. It tasted so good dipped into the herb infused olive oil (Yes I had to taste a piece of the bread dipped into the herbal infused olive oil!). I decided to leave it in it's freshly baked, tender and delicious un-toasted state.
If you like you can lightly toast the bread. It's up to you.
How to Make Roasted Golden Beet Marinated Mozzarella Herb Crostini
Ingredients
- 1 lb log of fresh mozzarella cheese
- 5 tablespoons best extra virgin Olive Oil
- 2 pieces sun dried tomato in olive oil, finely minced
- 1 teaspoon chopped garlic
- 1 teaspoon finely chopped fresh thyme
- 1 teaspoon finely chopped fresh rosemary
- ¼ - ½ teaspoon finely chopped fresh basil
- ¼ teaspoon red pepper flakes, roughly minced
- salt and pepper to taste
- 2 medium Roasted Golden Beets, cooled and sliced
- 1 loaf fresh baked banquette bread baked early in the day or a store bought baguette, sliced
Directions
- Bake the bread if making a homemade baguette early in the day.
- Roast the beets the day before or early in the day before planning to serve this beet appetizer recipe.
- Place the first nine ingredients into an airtight container with the sliced mozzarella and marinate at least 1 hour before serving the Roasted Golden Beet Marinated Mozzarella Herb Crostini. Over night is best.
To Assemble the Roasted Golden Beet Marinated Mozzarella Herb Crostini
- Slice the bread thinly and lightly toast if desired by placing the bread slices on a cookie sheet and baking in a preheated 375 F. degree oven until lightly golden on one side. Flip the bread and toast the opposite side. Do not over toast.
- Place the toasted bread onto a serving platter.
- Drizzle a bit of the herbal olive oil from the marinated mozzarella over each slice of bread.
- Place a slice of marinated mozzarella on each piece of bread.
- Next place a slice or half a slice of roasted golden beets on top of each slice of marinated mozzarella.
- Drizzle a bit of the herbal infused olive oil over the top of each crostini and serve.

Such a bright dish!!! I love the sundried tomatoes in the mozzarella marinade! If you have beets prepared a day or two in advance and mozzarella marinating in the fridge then it's a very easy appetizer. I love recipes that can be stretched over a few days. It makes it easier to plan and cook!
