How To Roast Beets
Once you bring some beautiful fresh beets home (look at how pretty those golden beets are!) you need to decide what beet recipe you are going to make. Roasting fresh vegetables is a great way to add an extra punch of flavor. Check out How to Roast Beets to see just how easy it is.

Fresh Florida produce at the Farmer's Market
Going to the farmers market can be a dangerous thing for me. I usually end up buying way too much fresh produce. I also end up buying produce like these fresh beets. A vegetable I have never cooked before now.
Once I arrived home with these fresh golden and red beets I had no idea what I was going to make with them.
I pulled out my (affiliate links) FoodSaver vacuum sealing system to vacuum seal the flat of strawberries I had also bought. I told you the Farmer's Market could be a dangerous place for me.
I had specifically gone to buy a flat of Fresh from Florida strawberries. It is Florida strawberry season here and I had to get my fix of sweet and plump Florida strawberries.
I made some strawberry and blueberry Freezer Smoothie Packs, vacuum sealed enough strawberries for one batch of strawberry jam, and one batch of strawberry and blueberry jam. Then I vacuum sealed the remaining strawberries and froze them.
Since I wasn't sure what I was going to do with the fresh beats I decided to buy myself some extra time (like 5's the extra refrigerator time) in case I needed a little while to come up with a recipe or two using my fresh beets.
Recipes using Roasted Golden Beets
Besides roasting the beets I came up with a couple of recipes using these gorgeous golden beets. I'll share them soon.
Roasting Vegetables

5 ingredient you need to roast vegetables
- The vegetable you want to roast-in this case golden and red beets
- Olive oil
- fresh garlic cloves, peeled and roughly chopped
- sea salt
- freshly ground pepper
You'll also need aluminum foil or parchment paper. I ended up wrapping the fresh beets in parchment paper and then aluminum foil. You can just use aluminum foil.
How to roast beets
Ingredients
- fresh golden or red beets
- 1 tablespoon olive oil per beet
- a sprinkle of seas salt
- a sprinkle of freshly cracked peppercorns or ground pepper if that's what you have
Directions
- Preheat the oven to 400 F. degrees.
- Cut the leaves off if your beets still have them.
- Scrub and rinse each beet under running water until you've removed all the surface dirt.
- Pat dry with a towel.
- Place a piece of aluminum foil on a work surface.
- Place a piece of garlic, a sprinkle of salt and some ground pepper in the center of the foil.
- Place the beet in the center of the foil and repeat with the garlic, salt and pepper.
- Drizzle the olive oil over the beet.
- Fold the aluminum foil up and around the beet and twist at the top.
- Repeat with remaining beets.
- Place all the prepared beets on a cookie sheet.
- Roast in the oven for 45-90 minutes depending on the size of the beets, until fork tender.
- Allow beets to cool then peel. The red beets will stain so wear plastic gloves or place a plastic sandwich bag over your hands while peeling.
- Extra large beets should be cut in half.
- Try to buy beets that are about the same size so they will be done roasting at the same time.
Now that you have learned how to roasted beets you have a bowl full of delicious roasted beets to eat. You can slice them up and eat them or use them in another beet recipe like beet salad.

- 1 teaspoon a sprinkle of freshly cracked peppercorns or ground pepper if that's what you have

- Preheat the oven to 400 F. degrees.
