Crock Pot Smoked Barbecue Beef Brisket

Slow cooking a brisket in the crock pot is one of the best ways to cook a beef brisket that is moist and tender. The flavors are perfect and the beef brisket will be tender. 

Serve the bbq brisket for dinner and then make sandwiches the next day with the leftover brisket.

How to get a smoky flavor

No smoker, no problem. The secret to getting that smoky bbq flavor when slow cooking beef brisket in the crock pot is Liquid Smoke.

Liquid Smoke is a magical seasoning that will take all your favorite crock pot barbecue recipes to the next level.

Liquid Smoke is available in a few different liquid smoke flavors.

Today I used Apple-wood Liquid Smoke to make this Smoked Beef Brisket in the slow cooker.

The apple flavored liquid smoke has a nice mellow smokey flavor that doesn't overpower the flavor of meats.

Choose a liquid smoke flavor that you enjoy. Another good liquid smoke flavor I like to use is mesquite liquid smoke.

Sweet & Smokey Slow Cooker Brisket

We enjoyed smoked barbecue beef brisket sandwiches on fresh boule bread I picked up at the farmers market.

Recipe Prep

  • The night before planning to cook: The night before you plan to cook the brisket place the meat into a ziplock bag or a container with a tight-fitting lid. Pour the liquid smoke into the container. Close the container and squash the bag or shake the container so the liquid smoke covers the brisket. Refrigerate overnight.
  • Cooking day: Slice the onion with a sharp paring knife and place the slices on the bottom of the slow cooker in a single layer.
  • Marinated Brisket: Remove the brisket from the container you marinated it in. Place the meat (fat side up) on top of the sliced onion pieces in the slow cooker. Discard the liquid smoke marinade.
  • Season the meat: Sprinkle salt and pepper over the brisket. Spread the minced garlic over the top of the meat and use a silicone spatula to rub the garlic into the top of the meat. Pour the Worcestershire sauce over the top of the meat.
  • Slow Cook the brisket: Slow cook the brisket following the directions below.

Barbecue Beef Brisket

Ingredients

  • flat beef brisket
  • liquid smoke: this will add that bbq smoky flavor
  • white or sweet onion
  • salt and ground black pepper to taste
  • minced garlic
  • Worcestershire sauce
  • 1 - 2 cups of a sweet barbecue sauce

Directions

  1. Prep the brisket the night before planning to cook by placing the brisket in a ziplock bag or a container with the ¼ - ½ cup liquid smoke. Place in the refrigerator overnight.
  2. On the day you plan to cook the brisket place the sliced onion in the bottom of a 7 quart or 8-quart crock pot.
  3. Drain the liquid smoke from the bag or container and place the brisket fat side up in the slow cooker.
  4. Season the meat with salt and ground black pepper. Rub the minced garlic over the top of the meat.
  5. Pour the Worcestershire sauce over the top of the brisket.
  6. Cover the slow cooker and cook on low for 8 to 10 hours.
  7. One hour before the brisket is done pour the barbecue sauce over the meat, recover and continue to slow cook for the remaining time.
  8. Remove the brisket from the crock pot and place it on a platter to rest for about 10 minutes before slicing.
  9. Slice the brisket against the grain.
  10. Serve as desired.

Brisket Expert tips

  • Brisket fat cap on or off? The fat cap on a brisket should be left on while cooking. It will help baste the meat as it cooks and will keep the brisket tender. After the brisket has cooked and rested you can remove the thick piece of fat.
  • When is a slow cooker bbq brisket done? Use a meat thermometer to check the internal temperature of the bbq brisket. The internal temperature should be between 185 F. and 200 F at the thickest part of the brisket.

Ingredients  

  • 3 lb flat beef brisket
  • ¼ cup liquid smoke
  • 1 small small onion sliced
  • salt and pepper to taste
  • 1 teaspoon minced garlic
  • ¼ cup Worcestershire sauce
  • 2 cups barbecue sauce

Instructions 

Marinate the brisket

  • One hour before the brisket is done brush the barbecue sauce over the meat, recover and continue to slow cook for the remaining time.
  • Remove the brisket from the crock pot and place it on a platter to rest for  10 to 15 minutes before slicing.
  • Slice the brisket against the grain.
  • Serve as desired.
  • Makes about 6 servings.
