Step 1: On a cutting mat with a sharp knife carefully cut the potatoes into bite-size pieces. As you cut the red potatoes place them in a large bowl of cold water (to keep from browning) as you cut the remaining potatoes.

Once you have cut all of the potatoes rinse well under cold running water until the water is no longer cloudy to remove most of the starch. Drain well before cooking.

Recipe Expert Tips

  • The potatoes: Red potatoes hold up well to cooking when cubed. You can use other varieties of potatoes like Yukon Gold. Baking potatoes are not recommended. They will fall apart when cooking in a skillet.
  • To prevent the potatoes from browning: Keep the potatoes in the cold water until you are ready to cook.
  • How long to make garlic potatoes?: This recipe takes about 45 minutes to make when using 1 to 2 inch cubes of potatoes. Cutting the potato pieces smaller will help cook this quicker. Don't cut them too small or they will turn into mashed potatoes.
