Biscuits and Gravy Casserole takes this traditional southern breakfast to new heights with an added layer of scrambled eggs on the bottom.

The base of tender, fluffy eggs mixed with sharp cheddar cheese sets the stage for a delicious experience. When you add in the homemade sausage gravy and golden biscuits, it turns a simple meal into an unforgettable feast.

Not only is this casserole recipe incredibly tasty, but its preparation ease makes serving a family breakfast or hosting a brunch feel almost effortlessly chic.

The savory and rich flavors of the sausage gravy perfectly balance the light, fluffy texture of the egg layer, creating a symphony of taste in every bite. It's the kind of recipe that pulls everyone to the table, eager for the first taste.

I love serving breakfast casseroles like my cheesy sausage and eggs Velveeta Breakfast Casserole, Amish Breakfast Bake, and Kielbasa Breakfast Bake.

Recipe Prep

Getting your breakfast casserole ready is easier than you might think, and it's going to be a game-changer in your morning routine. Trust me, with a little prepping, you’ll be sipping on your coffee stress-free while this beauty bakes.

  • Sausage Prep: First things first, grab your skillet and cook the breakfast sausage until it’s perfectly browned. Remember to break it into crumbles as it cooks; we’re looking for that nice, even texture.
  • Biscuit Prep: Open each roll of the refrigerator biscuits. On a cutting board use a sharp knife to cut each biscuits into quarters.

Step by Step Directions

  • Sausage Gravy: In the same skillet you cooked the sausage in, you'll use the sausage drippings and butter to whip up your roux. Whisk in the flour, stirring until golden and bubbly. Slowly pour in the milk, stirring continuously until it thickens into that rich, velvety gravy. Season with salt and pepper to taste.
  • Egg Mixture: In a separate bowl, whisk together your eggs, milk, and a good handful of cheese. This is the layer that makes the casserole truly special, so pour your love into it.
  • Biscuit Layer: This is where it gets fun - take those Grands! biscuits and cut them into quarters. Spread half of them at the bottom of your greased baking dish to create a fluffy, golden base for your layers.

  • Casserole Layers: Now, layer on that sausage gravy, pour over the egg mixture, then top it off with the remaining biscuit pieces and another sprinkle of cheese. It's like building a delicious, savory tower of yum.

  • Single serve cups of Vanilla Bean Yogurt parfaits with honey and Pineapple Blueberry Granola
  • Set up a DIY coffee bar and serve coffee shop drinks

Recipe FAQs

Can I use any type of milk?

Yes, but whole milk gives the best creaminess. You can also use half and half or low fat milk if you like.

Can I prepare this casserole the night before?

Yes you can, just prepare up to the baking step, cover, and refrigerate. But it may end up a dryer because the biscuits will absorb some of the eggs and gravy.

How do I know when the casserole is done?

The center should be set, and the biscuits golden brown. You can poke a fork in the center to test a piece of biscuit. The biscuit should not be doughy.

Storing and Reheating Leftovers:

  • To keep leftovers, store them in an airtight container in the fridge, where they'll remain fresh for up to 3 days.
  • While freezing is possible, it's best enjoyed fresh for optimal biscuit texture.
  • Reheat in the oven for best results, restoring its crispy top and creamy layers. You can also reheat in an air fryer.
