Perfect Bell Peppers
When purchasing bell peppers for your stuffed peppers recipe, look for ones that are bright, firm, and free of soft spots. A heavier pepper usually indicates more inner space for stuffing, and choosing peppers with even bottoms ensures they will stand up nicely while cooking.
Opting for a mix of colors not only adds visual appeal but also introduces a variety of flavors; red peppers are generally sweeter, while green peppers have a bit more of a crisp, zesty bite.

Stuffed Pepper Ingredients
Our Southwestern Stuffed Bell Peppers recipe brings together a colorful medley of vibrant flavors and textures.
Fresh bell peppers, halved and seeded, become the perfect vessel for a hearty filling.
The stuffing is a delicious combination of ground beef, diced yellow onion, minced fresh garlic, and chopped tomato, all masterfully seasoned with taco seasoning, salt, and pepper.
- olive oil
- lean ground beef: A rich protein base that soaks up the Southwestern spices and gives the stuffing a robust and hearty texture.
- yellow onion: Chopped into small dices, it brings a subtle sweetness and a satisfying crunch, enhancing the overall savoriness of the dish.
- fresh garlic: Minced finely, garlic adds a pungent aroma and a zesty taste that is fundamental in building the Southwestern flavor profile.
- Bell Peppers (halved and seeded): Often in red, green, or yellow, these peppers add a splash of color and a crisp, sweet flavor that contrasts beautifully with the savory filling.
- a large tomato: Fresh chunks of tomato offer juiciness and a light tang, providing a fresh contrast to the dense beef.
- taco seasoning: This mix of spices is the soul of the dish, offering a warm, spicy kick that defines the Southwestern palate.
- water
- salt and pepper to taste: Essential seasoning that adjusts the dish to the perfect savory note, complementing the other flavors and bringing balance.
- Colby jack or cheddar cheese: Added to the filling and shredded generously over the top, this cheese melts into a gooey layer of flavor that smoothly binds all the ingredients together, giving a creamy texture and a sharp, tangy taste.
- black beans: These add a creamy texture and earthy flavor that is rich in protein and fiber, complementing the ground beef while adding wholesomeness to each bite.
- Sweet Corn: Kernels freshly cut from the cob provide a burst of sweetness and a pop of texture, offering a balance to the savory and spicy elements of the dish.
- optional toppings: Salsa, Sour cream, Crushed tortilla chips
How to make Southwestern Stuffed Peppers
- Step 1: You will need to brown the ground beef, onion and garlic first. Drain well.
- Step 2: Add the taco seasoning, water, corn, black beans, tomatoes and shredded cheese to the stuffed pepper filling in the skillet.
- Step 3: Let the filling cook for a few minutes so the cheese can melt. Remove the skillet from the burner to cool just enough to add the remaining shredded cheese.
- Step 4: Fill the bell peppers, top with more shredded cheese and bake for 15 to 20 minutes until the filling is heated through and the cheese is melted.
- Step 5: To serve top with sour cream, crushed tortilla chips and salsa if desired.
