When the heat of summer sets in, nothing hits the spot quite like a cool, fruity beverage—and this Blackberry Iced Tea recipe is just the drink to keep you refreshed all season long.
Made with plump, juicy blackberries at their peak of ripeness, this recipe blends the boldness of brewed tea with the natural sweetness and tang of fresh berries.

Fresh Berry recipes
One of the things I love about the summer is all the fresh berries and fruits that are in season. I love using fresh fruits to make a simple syrup to have on hand to make fruit flavored iced tea.
You can make Peach Iced Tea, Mango Iced Tea, and Cherry Iced Tea.
Ingredients
- 2 cups fresh or frozen blackberries
- 2 cups water
- 2 tablespoons lemon juice
- 1 ½ cups sugar or sweetener of choice
- home brewed Iced Tea (adjust the sweetener if desired)
Directions
- In a saucepan bring the blackberries, water and lemon juice to a simmer.
- Simmer until reduced by ½ cup, about 15-20 minutes.
- Occasionally mash berries on the side of the pot with the back of spoon.
- Once the mixture has reduced allow to cool slightly then stir in the sugar until it dissolves. Simmer for 2 minutes to make sure the sugar has dissolved.
- Strain the syrup over a bowl with a fine mesh strainer and discard the solids.
- Store in a bottle or mason jar in the refrigerator until use.
- Pour about 3 tablespoons of blackberry syrup into a glass of iced tea.

Just when does the Splenda get added to the syrup? During the cooking or after it is strained?

Sorry about the confusion. After the cooking allow the syrup to cool slightly then add the Splenda. Stir until dissolved then strain.
