Chocolate covered wafer cookies can be customized and decorated for any holiday or special occasion. I've made Halloween Wafer Cookies and Valentine's Day Wafer Cookies using the same easy steps.
They also make great party favor treats for birthday parties, and baby showers. You can use vanilla wafer cookies, chocolate wafer cookies or even pink wafer cookies to make them.
I love how easy it is to make a big batch of no bake cookies like Reindeer Christmas Cookies, Butterscotch Haystack Cookies, or Chocolate Haystack Cookies during the holiday season.

All you need to make these easy no bake dipped vanilla wafer cookies is 3 ingredients. Check out my tips below:
- Vanilla Wafer cookies: vanilla wafer cookies are available in three flavors: chocolate, vanilla and strawberry. I am using the white vanilla and strawberry flavored cookies for this recipe.
- Melting chocolate, Wilton candy melts or vanilla almond bark: I love using Ghirardelli melting chocolate these days. It has a better chocolate flavor. You can also use almond bark or chocolate chips to dip the cookies in melted chocolate. Each type of chocolate you decide to use will have a different melting point. You may also need to thin the chocolate with a small amount of shortening.
- Christmas themed sprinkles: use any holiday themed sprinkles you have on hand.

- Microwave safe bowl to melt the chocolate or a electric chocolate melting pot. A melting pot comes in very handy when you plan on making a large batch of chocolate dipped cookies. It keeps the chocolate from hardening and can be used to make all kinds of chocolate dipped treats.
- Shallow baking pan or cookie sheet lined with parchment paper.

How to Prep
When working with melted chocolate it is important to have all of your ingredients and pans ready to go as soon as the chocolate is melted to the right consistency.
Chocolate starts to harden pretty quickly. You don't want any delays. Thickening chocolate is very hard to work with.
Step by Step Directions
- Step 1: Gather your ingredients and supplies. It is important to have all the supplies ready to go once the chocolate has been melted.
- Step 2: Melt the chocolate in the microwave or a chocolate melting pot.
If using the microwave pour the chocolate wafers or candy melts in a deep narrow bowl. If using almond bark chop the bark up into small pieces before placing in the bowl.
Pro Chocolate Melting Tips
Slowly melt the chocolate in the microwave starting with 20 seconds and decreasing the time down to 5 seconds until there are only small pieces left.
Stir the melted candy until all the lumps are completely melted and the chocolate is smooth. This should only take 20 to 40 seconds in total time. Do not over heat or the melting candy will seize and you will have to throw it away and start over with new candy wafers.
- Step 3: Once melted dip each wafer cookie one fourth to half way into the melted chocolate. Hold it above the bowl and allow the excess chocolate to drip back into the bowl. Place the wafer cookie down onto the parchment lined cookie sheet and decorate with sprinkles immediately. Repeat with all the cookies.
- Step 4: Allow the chocolate to harden undisturbed on the baking sheet. Once hardened you can store the decorated cookies in an airtight container until ready to serve.

- Red or green sugar: Christmas colored sugar sprinkles.
- Christmas themed sprinkles: Sprinkles are available in many holiday colors and themes.
- Red and Green M&Ms: Holiday M&M's can be pushed into the melted chocolate before it hardens.

- Dipping Chocolate: These days I prefer a good quality melting chocolate over candy melts or almond bark. It is much easier to melt to a smooth consistency and has a better flavor. As long as you are careful it will not seize as easily as candy melts will if you over heat it.
- Parchment paper: Parchment paper is a must have when making these cookies or any other candy treat that is dipped in melted chocolate and placed on a cookie sheet to harden. The chocolate will not stick to parchment paper like it will if you use wax paper.

- 16 oz. Melting chocolate (Wilton candy melts or vanilla almond bark)
- 4 colors Christmas themed sprinkles
