When I recently saw the Shell Beach Cocktail recipe featured in the Louisiana Cooking newsletter I knew I had to make it.

I live near the best shell beach in the world. Sanibel Island. Sanibel Island is the seashell capital of the world.

The Shell Beach Cocktail is made by combining homemade Pineapple Ginger Rum and Rose sparkling wine, and orange bitters.

This exotic simple but complex combination of flavors is perfect to sip on seas side as you bask in the summer sun.

The rich complex flavors of the infused pineapple rum blend well with the bubbly pink sparkling wine.

Homemade Pineapple Ginger Rum

One of the most important ingredients in the Shell Beach Cocktail recipe is the homemade Pineapple Ginger Rum.

You could buy a bottle of pineapple rum and add a few slices of fresh ginger to each glass if you must.

But I am afraid you will not be able to enjoy the amazing and distinct flavor combination of the homemade pineapple ginger rum.

Homemade Pineapple Ginger Rum Ingredients

The homemade pineapple ginger rum is made by infusing white rum with fresh pineapple, fresh ginger, anise, and citrus peel.

This amazing concoction will need to steep for a couple of weeks before you can mix it into this Sparkling Rose' and rum cocktail. Planning ahead is a must for this delicious beach cocktail recipe.

How To Make a Shell Beach Cocktail

This recipe for the Shell Beach Cocktail will make a pitcher full of the cocktail that is perfect when serving friends at dinner, a dinner party or even a wedding shower. Each pitcher of Shell Beach Cocktail will serve at least 8 people.

Measure and mix the pineapple ginger rum, chilled Rose' sparkling rum, and orange bitters into a glass pitcher. Normally I would fill the pitcher with ice and add the cocktail ingredients to the ice-filled pitcher.

But since you'll be sipping on this Rose' and rum cocktail beachside during the hot summer it is best to fill the high ball glasses with ice and pour the chilled cocktail over the ice in a highball glass to keep the cocktail from becoming watered down when the ice in the pitcher melts in the heat.

You could fill a large bowl with ice cubes and nestle the glass pitcher into the ice cubes to keep the cocktail well chilled while serving.

Ingredients  

  • 2 cups chilled Rose' sparkling wine
  • 1 ½ cups chilled Pineapple Ginger Rum (Pineapple Ginger Rum recipe)
  • 2 ounces orange bitters
  • Pineapple chunks (rosemary sprigs, orange or lime peel for garnish (optional))

  • In a large pitcher combine the sparkling wine, Pineapple Ginger Rum and Orange Bitters. 
  • Pour the mixed cocktail over ice in a high ball glass. Garnish with a rosemary sprig and pineapple chunk.
  • Makes 8 cocktails.
