Roasted Heirloom Tomato Ham Tart
When you have an overabundance of fresh tomatoes and are looking for a way to enjoy them besides in a salad or in a tomato sandwich make this Roasted Heirloom Tomato Ham Tart.
Fresh Summer Tomatoes
The best part of summer is the large selection of fresh tomatoes available. I love fresh tomatoes and look forward to the spring and summer when vine ripened tomatoes start showing up in the grocery stores and the farmers markets.
I especially love the heirloom tomatoes that are available now. I haven't had much luck growing heirloom tomato varieties in my container garden.
This year I did plant a black cherry tomato plant. I only managed to harvest 3 little black orbs before the horrendous heat set in.
You can see those little black tomatoes in the middle of my roasting tray. I threw them in with the mixed heirloom tomatoes I bought at the grocery store.
Summer really isn't the best time to garden here in Florida. It is just too hot and wet for most vegetable plants to thrive. I'll try again this fall. Hopefully I will have better luck.
Roasting Tomatoes
To make this Roasted Heirloom Tomato Ham Tart recipe you will have to roast the heirloom tomatoes first. I love to roast vegetables. Roasting vegetables causes the flavors to really intensify.
Tomatoes make the best roasted vegetables. The flavors really intensify as the sugar in the tomatoes is roasted. Add in the fresh rosemary, minced garlic and olive oil I added to the tomatoes and as far as I am concerned you have the best combination of flavors.

I'm not thrilled with this picture but I wanted to give you an idea of what you are looking for when roasting tomatoes. Tomatoes can turn into a big pile of mush if you roast them too long.
Most other roasted vegetables can go longer and develop a nice char on the outside. I wanted the tomatoes to hold their shape for the tart filling so I didn't roast them as long as I would roast other vegetables.
How to Make Roasted Heirloom Tomato Ham Tart
Ingredients
- 1 prepared pie crust, pre-baked 10 minutes
- 1 ½ - 2 cups roasted tomatoes
- ½ cup cubed or sliced ham
- 8 oz Cream Havarti Cheese, cubed
- ¼ - ½ cup shredded Smoked Goudam Cheese
- ¼ cup sliced black olives
- 1 teaspoon minced garlic
- ½ teaspoon fresh minced rosemary
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- ½ cup panko bread crumbs
Directions
- Roast the heirloom tomatoes in a preheated 400 F. degree oven.
- Cool and drain the excess liquid for about 15 minutes.
- Prepare the pie crust by placing it into a tart pan and spreading it along the bottom and up the sides.
- Pre-bake the pie crust for 10 minutes.
- Mix the roasted tomatoes with the 8 remaining ingredients up to the pepper in a large bowl.
- Sprinkle the bread crumbs over the top of the tart.
- Bake in the oven for 20 - 30 minutes or until the cheeses are melted and the bread crumbs are a golden brown.
- Allow tart to cool. Serve warm or room temperature.
