Homemade Tropical Ice Pops Summer time treat

Homemade Tropical Ice Pops are amazing during the hot summer months. You can make them in fun flavors

You can find almost any combination of flavors in ice pops. Some make my mouth water. Others make me think WHY ?

You can find ice pop molds in almost every discount store. I've even picked some up at the dollar store.

We are already hitting the low 90's .The hot weather is already here in S.W. Florida and there is still a few days before June 1st. It is bound to be an ice pop filled summer here at my house. Our favorite family recipes are my homemade ice pops.

The grandkids especially love my homemade very berry yogurt ice pops.

This easy ice pop recipe is packed full of tropical flavors. You can cut back on the sugar a bit if you want. I started out with ¼ cup but after tasting I added more sugar.

How to make Homemade Tropical Ice Pops

Ingredients

  • 1 can coconut milk
  • 1 cup crushed pineapple with juice
  • ½ cup milk
  • ½ cup sugar
  • a pinch of grated nutmeg

Directions

  1. Mix all ingredients together in a spouted bowl. Grate a pinch of fresh nutmeg over the bowl and mix well. Pour into ice pop molds and freeze.
  2. If you don't like big chunks of fruit in your ice pops whirl  the entire mixture  in the blender for about 30 seconds then fill the ice pop molds.
  3. Make 6 large ice pops.

Most ice pop molds that make the ice pops like you see here only have 4 compartments. So you can only make 4 ice pops at a time.
If you don't want to buy more molds you can freeze the first batch for about 3 hours, pop the ice pops out and wrap in plastic wrap and return to the freezer.

Then you can fill the mold again. The molds are very cheap so just buy a couple when you find them and you will always have them on hand when the mood strikes you to make some ice pops.

These look so good and remind me of these little carts that would come by my neighborhood when I lived in California. Just like an ice cream truck but it was a cart a man would push and they would sell these tropical fruit popsicles. I loved them better than the regular ice cream truck!
