  • Mandolin Slicer or sharp knife and cutting board: For uniformly thin slices a mandolin works best. If using a knife you should try to evenly cut all slices the same ¼ inch thickness.
  • Airtight Containers: To store your dehydrated fruits you will need airtight containers. Mason jars, vacuum sealed bags and mylar bags work the best.
  • Plastic mesh tray liners: are optional, but these handy inexpensive tray liners prevent smaller pieces from falling through the spaces of the dehydrator trays. They also are great for easier cleanup.
  • Spice Grinder: Optional, for creating fruit or vegetable powders.
  • Food Dehydrator: While a dehydrator is my preferred method of drying fruits. There are many price points for food dehydrators. You can buy them from about $50 on up. Check out my Dehydrating Gift Guide for more information. If you don't have a dehydrator an oven or air fryer will also work.

  • Slice Uniformly: Even thickness ensures even drying.
  • Pre-treat to Prevent Browning: Dip fruits like apples and bananas in lemon juice or ascorbic acid solution.
  • Keep the Temperature Low: Slow and low temperature preserves color and nutrients. Most fruits are dehydrated at 135 F. degrees. If you prefer raw living foods you will dry at 95 to 105 F. degrees. It will take much longer to dry the fruits at these low temperatures.
  • Rotate Trays: If using a dehydrator, rotate trays for even drying.
  • Test for Dryness: Properly dried fruits should be pliable but not sticky. You should condition the fruits for a week to make sure. If you like crisp and crunchy dried fruits like banana chips that is also fine. You will dry them longer until the snap when bent in half.
  • Store Properly: In airtight containers, in a cool, dark place to maintain freshness.

When stored properly, they can last for up to a year. You can extend the shelf life by vacuum sealing the properly dried fruits.

Can I dehydrate frozen fruits?

Yes, thaw them first and blot away excess moisture.

Is a dehydrator necessary for making dried fruits?

No, an oven set to the lowest temperature can also work, though it may take longer.
