It is one of the easiest crock pot soup recipes you can make.
A while back I shared this Spinach Ravioli with Garden Vegetable Sauce recipe.
I had a bunch of the frozen spinach ravioli leftover from that recipe and thought it would make a fine Crock Pot Spinach Ravioli Soup recipe.
I was right. It made a delicious ravioli soup recipe.

Today December 25th, 2015 is the last Friday in the year. What does that mean for me?
Well, it is a huge milestone for me, back on January 4th, 2015 I posted the first Crock Pot recipe for my Crock Pot Friday series.
The first Crock Pot recipe was for Crock Pot Chicken and Dumplings.
A year ago I had no idea if I would even be able to keep up with a weekly recipe series. I had never done it before.
I am so glad that I did. I have had so much fun sharing a new crock pot recipe every week. It has been challenging.
Sometimes I had no idea what kind of crock pot recipe I was going to make until the day before.
In the past year, I've learned that crock pot dessert recipes can be a challenge.
Weekly Crock Pot recipes
So this year not only am I going to continue to post a new crock pot recipe each Friday but I am really going to work on those crock pot dessert recipes.
It's not so much that the crock pot recipes I tried didn't turn out delicious it's that they are the hardest recipes I have ever tried to photograph.
I'm glad I had some of that spinach ravioli leftover or I would have never made this crock pot soup recipe.
How to make Crock Pot Spinach Ravioli Soup
Ingredients
- 6 cups vegetable broth
- 1 medium onion
- 1 small bay leaf
- 4 small carrots cut into medallions
- ½ teaspoon pepper
- 1 14 oz can Hunt's Garlic Fire roasted diced tomatoes
- 1 cup fresh baby spinach leaves
- 3 cups small frozen spinach ravioli
- ½ cup finely grated fresh parmesan cheese
- Place the first 7 ingredients into a 4-quart crock pot.
- Cook on high for 3 hours or until the carrots are tender.
- Remove the onion and bay leaf from the crock pot.
- Grate the parmesan cheese into the crock pot and add the frozen ravioli.
- Cook 1 hour on high or until the ravioli are heated through.
