Crock Pot Kielbasa Soup Recipe

Kielbasa soup with beans is one of many delicious sausage soup recipes that are easy to make and uses simple ingredients you probably have on hand.

Start with your favorite smoked kielbasa sausage and you can customize this crock pot soup recipe for your family.

Crock Pot Kielbasa Soup recipe

This soup recipe is full of smoked kielbasa sausage, fresh golden potato chunks, and sliced carrots.

As the soup slow-cooks for hours the potatoes will absorb the smoky flavor of the sausage. And the broth will be rich and flavorful from all of the fresh ingredients cooking together.

Ingredients

Whenever I make homemade soup I always like to use a diced onion, lots of minced garlic and dry bay leaves.

If there is one spice I could never live without it would have to be dried bay leaves. Bay leaves add the best flavor to soups and stews.

  • Smoked Sausage: Smoked kielbasa sausage is easy to find and relatively inexpensive.
  • Potatoes: You can use just about any type of potato you have on hand.
  • Soup vegetables: onion, garlic and carrots are basic soup vegetables that add lots of flavor to any soup recipe. If you don't have fresh onion or garlic you can use garlic and onion powder instead.
  • Canned beans: I love using cannellini beans to make soup.
  • Canned tomatoes: This recipe calls for diced tomatoes. You can use a can of whole tomatoes or crushed tomatoes. Or use about 1 ½ cups of diced fresh tomato.
  • Soup seasonings: Bay leaves is a must have spice for all homemade soups. Salt and pepper to taste.

Let's make soup!

Start by slicing the kielbasa sausage and putting it into the crock pot.

Peel and cube the potatoes. Cubed potatoes work best when cooking them for long periods of time in the slow cooker. Slice the carrots and add to the crock pot.

Peel, slice and roughly chop the onion. Mince the fresh garlic or use jarred minced garlic. Put the potatoes, onion and garlic in the crock pot.

Drain and rinse the can of beans before adding them to the other ingredients in the crock pot. Open the can of tomatoes and pour into the crock pot.

Measure the seasoning and add. Pour the broth in and give everything a stir with a large spoon.

Place the lid on and cook for 4 hours on high or 6 to 8 hours on low.

Ingredients  

  • 1 lb smoked kielbasa sausage (cut into rounds)
  • 1 lb potatoes (peeled, rinsed and diced)
  • 1 large carrot (peeled, rinsed and sliced)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 15 oz can cannellini beans (drained and rinsed)
  • 14.5 oz can diced tomatoes
  • 2 large bay leaves
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 cups chicken broth

Instructions 

  • Slice the kielbasa sausage and put it into the crock pot.
  • Peel and cube the potatoes and slice the carrot before adding them to the crock pot.
  • Chop the onion and mince the garlic then add to the crock pot.
  • Add the remaining soup ingredients into a 6 or 7-quart crock pot.
  • Place the lid on and cook for 4 hours on high or 6 to 8 hours on low.
