I love trying new flavor combos in my crock pot recipes and garlic lime salsa is so good I knew I was going to love it in this crock pot salsa soup recipe.
I love my soups chunky so I only used 2 ½ cups of chicken broth in this recipe. If you like a soupy soup you could add another cup of broth to the crock pot.
Sprinkle some shredded cheese on top. Add a dollop of sour cream and top it with some salsa verde to really add the wow factor to this already delicious crock pot soup recipe.
How to Make Crock Pot Garlic Lime Chicken Salsa Soup
Ingredients
- 1 ½ pounds boneless chicken breast cut into bite-sized pieces
- 2 ½ cups chicken broth
- 16-ounce jar Garlic Lime Verde Salsa
- 15.5-ounce can black beans, drained and rinsed well
- 1 cup corn kernels
- 1 teaspoon ground cumin
- ½ cup long grain rice, rinsed well
Directions
- Place all the ingredients except the rice into a 4-quart crock pot.
- Cook on low for 3 hours or until the chicken is cooked through.
- Add the rice and increase temperature to high.
- Cook about 1 hour or until the rice is tender.
- Serves 4-6
How Long to cook crock pot soup recipes?
Do you need to cook this chicken crock pot recipe for longer than 4 hours because you will be away from home?
Instead of cutting the chicken into bite size pieces leave the boneless chicken breast halves whole.
Depending on the thickness of the chicken breast pieces it will add an hour or more onto the cooking time.
Before adding the rice to the crock pot remove the chicken pieces and shred.
Return the chicken to the crock pot and continue with the directions for cooking the rice in this crock pot soup recipe.
