This easy Chicken Fajita Bowl recipe uses store-bought rotisserie chicken. You won't find an easier crock pot chicken recipe than this.
I love to pick up a rotisserie chicken every once in a while.
Most times we just eat the rotisserie chicken for dinner with some mashed potatoes on the side and a vegetable.
Or I will use the rotisserie chicken to make a chicken salad.
This time I decided I was in the mood for some Chicken Fajitas but I didn't want to mess around with cooking the chicken, peppers, and onions on the stove.
I threw all the ingredients into my crock pot and a few hours later I was chowing down on these Crock Pot Chicken Fajitas Bowls with all my favorite fajita toppings.
If you're not in the mood for a fajita bowl you can just serve the Crock Pot Chicken Fajitas on warmed tortilla's.
Chicken Fajita Toppings
What do you like to top your chicken fajitas with?
Since I was eating Chicken Fajita Bowls I could pile the toppings on.
I layered cooked white rice, the chicken fajitas filling and topped the bowl with all my favorite fajita toppings.
Sliced avocado is delicious on chicken fajitas.
I used grilled corn, tomatoes, black olives, sour cream, pickled jalapeno peppers.
I didn't put cheese on my chicken fajita bowls but you can pile on your favorite cheese if that is what you like.
Shredded cheddar or pepper jack cheese is a good cheese to top a chicken fajita bowl with.
Easy Chicken Fajitas Ingredients
- 1 rotisserie chicken, meat removed from the bones and cut into thin slices (about 4 to 5 cups cooked chicken meat)
- 1 ½ cups sliced sweet peppers (I used a combo of red, green and yellow sweet peppers)
- 1 small sliced onion
- 2 envelopes Fajita seasoning mix
- ⅔ cups water
Recipe Step by Step Directions
- Place the cooked chicken, sliced sweet bell peppers and sliced onion into a 7-quart crock pot.
- Sprinkle the Fajita seasoning mix over the top of the chicken, peppers, and onion. Toss with a large spoon to cover all the ingredients with the Fajita seasoning.
- Pour ⅔ cup water over the fajita ingredients in the crock pot.
- Toss with a spoon to dampen the fajita seasoning.
- Set the crock pot to the high setting and if it has a timer set the timer to 2 hours.
- Serve over warm tortillas or make a chicken fajita bowl as I did.
- Makes 8+ served over tortillas or 4 chicken fajita bowls.
