Fall is here and we all know what that means... Apple recipes. This Caramel Pecan Baked Apples recipe has all the flavors you can associate with Fall.
This easy baked apple recipe is made with sweet Honey Crisp Apples, Pecans, and Caramel. Caramel is on your Fall flavors list isn't it?
I am so jealous of all of you who live up north in apple country. It must be so much fun going to an apple orchard and picking apples. All the different varieties that you have to choose from really makes me jealous.
One of the best things about apple season is that we get a few more varieties of apples to pick from in the grocery stores.
These Honey Crisp apples are one of my favorite apple varieties. They are sweet and crisp. If you happen to find them in a store near you try them out. I bet they become your favorite apple also.
So while most of the country is reveling in the beautiful cool Fall weather and the changing of the leaves we are having a heat wave in my part of Florida.
Last week we apparently broke some 20 year old heat records. The heat index was 98 one day. 98 in November is unreal even for Florida.
We are desperate for some Fall like weather down here. After the scorching summer we had everyone I know has been looking forward to Fall even more than usual.
My sweaters are still hanging in the back of my closet. It doesn't look like I am going to be wearing them for awhile yet.
Ingredients
- cool water
- 2 tablespoons lemon juice
- 6 Honey Crisp apples
- ¾ c brown sugar
- ½ cup raisins
- ½ c chopped pecans
- ½ cup caramel sauce
- ¼ cup apple cider or apple juice
- cinnamon
Directions
- Fill a large bowl with cold water and add the lemon juice.
- Using a melon baller scoop the seeds from the center of the apple.
- Turn the apple over and remove the core.
- Repeat with remaining apples placing each one in the lemon water to prevent browning.
- Place the apples in the bottom of a crock pot.
- Add the brown sugar, pecans, raisins, caramel, and apple cider.
- Sprinkle cinnamon over each apple.
- Cook on high for about 2 hours.
- Remove the baked apples from the crock pot to a serving platter.
- Drizzle the sauce from the crock pot over the apples before serving
Makes 6 servings.

I have seen caramel pecan apples but I never thought about cooking them in a crock pot. Very good!
