Fresh asparagus bundles wrapped in smoky bacon drizzled with olive oil and sprinkled with salt and pepper is an easy Spring or Summer side dish recipe. You only need a couple of ingredients for this flavorful dish.
One of my favorite vegetables of Spring is fresh asparagus. I love fresh asparagus.
I especially love bacon wrapped Asparagus Bundles.
Some of my very favorite side dish recipes are very simple to make. Delicious food does not have tons of ingredients.
Bacon Wrapped Asparagus Bundles only have a few ingredients but the flavor is out of it's world.
Sometimes I make them as a side dish with dinner but sometimes I will make them as an appetizer and eat them warm from the baking pan.
Ingredients
You only need 5 ingredients to make this vegetable side dish and two of are salt and pepper.
I also like to add a sprinkle of red pepper flakes to add a little hint of spicy flavor.
- asparagus: use fresh firm asparagus stalks with tight tips
- bacon: use regular cut bacon not thick cut bacon
- olive oil: use your favorite extra virgin olive oil. Use an oil with a light flavor
- sea salt
- fresh cracked pepper
Directions
Step 1: Rinse under cold water, pat dry and trim the tough ends off the asparagus.
Divide into bundles of similar sized stalks. For large stalks you will only need three pieces. For smaller stalks use about 5 pieces.
Making bundles of similar sized pieces of asparagus so the pieces will all cook at the same time.
Step 2: Wrap each bundle with one piece of bacon, over lapping and working your way down each bundle.
Step 3: Place the bundles in a single layer on a shallow baking pan.
Step 4: Drizzle olive oil over the asparagus bundles. Sprinkle salt and black pepper the bundles.
Step 5: Bake in a preheated 400 F. degree oven for 20 to 30 minutes or until the bacon is golden brown and crispy.

Equipment
- 1 9 x13 Baking Sheet
Ingredients
- 21 Spears large asparagus
- 7 Slices bacon
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- ¼ teaspoon red pepper flakes ((optional))
Instructions
- Trim the tough ends and divide the asparagus spears into 7 bundles of 3 large or 5 small asparagus spears.
- Wrap each bundle with one piece of bacon in a spiral along each bundle.
- Arrange the asparagus bundles in a single layer on a shallow baking pan.
- Drizzle olive oil over each bundle.
- Sprinkle with the red pepper flakes if using and the salt and pepper.
- In a preheated 400 F. degrees oven bake for 20 to 30 minutes or until bacon is crispy and golden.
