Easter Funfetti Cupcakes

These Easter Funfetti Cupcakes are a sweet little surprise perfect for your holiday dessert table! Each cupcake is filled with Easter sprinkles for a fun pop of color inside, making them just as fun to bite into as they are to decorate. Whether you're baking with the kids or whipping up a batch for Sunday brunch, these cupcakes are a cheerful and easy treat that'll bring smiles all around.

Update 2025: The Pillsbury's Funfetti colored cake mixes are no longer available. You can still make the recipe by using gel food coloring to color white cake mix. Some of the colored frostings like the pink I used here are available at Walmart.

I had a few different kinds of Easter sprinkles on hand, Once I had the Easter cupcakes made I decided it would be so much fun to fill them with some Easter sprinkles.

Warning! The Easter green sprinkles I used had tiny little hard candy Easter eggs in it. Towards the last few cupcakes, I filled I started removing the hard candy eggs from the green sprinkles. I was worried someone in my family would pick one up and take a big bite not expecting anything hard inside and chip a tooth.

I did tell everyone as they took a cupcake that they were filled with a surprise and might have some hard candies inside.

Next time I do this I will use plain sprinkles to be on the safe side. If you are serving these to guests it might be a good idea to add a little sign to your display warning they contain a hard candy surprise inside.

How to fill cupcakes with sprinkles

It is very easy to fill cupcakes. You don't need any special tools. A sharp knife and a steady hand are all you need.

Simply cut a circle out of the center, trim and fill with sprinkles or even strawberry or home made fruit filling if the sprinkles don't appeal to you.

Ingredients  

  • 1 box White Cake Mix (with ingredients to make)
  • ½ teaspoon pure lemon extract
  • 1 tub Neon Pink Funfetti Frosting or cream cheese frosting
  • Sprinkles of choice for filling (Easter themed)
  • Sprinkles for decorating the top. (Easter themed)

Instructions 

  • Prepare the white cake mix following the directions on the box. Add the ½ teaspoon lemon extract to the bowl with the rest of the cake mix ingredients.
  • If coloring the cupcake batter yellow add 5 to 12 drops of yellow gel food coloring to the batter towards the end of the mixing time. Do not over beat the cake mix.
  • Fill cupcake papers ¾ full.
  • Bake in a preheated 350F oven for 19-23 minutes.
  • Transfer the hot cupcakes to a metal cooling rack so the bottoms do not get moist as they cool.
  • Cool completely.
  • Once cool using a sharp knife cut a hole in the center and fill with sprinkles.
  • Replace the piece of cupcake you removed, first trimming a bit off the bottom so it fits back in the hole.
  • Frost with your choice of cream cheese frosting and decorate the top with more Easter themed sprinkles or non perils.
