Mocha Brownie Cupcakes

 One of my favorite flavor combos is coffee and chocolate. One of my favorite things to do is bake. Say hello to Mocha Brownie Cupcakes.

During the lazy days of summer I like to experiment in my baking. I seem to have more time to play around in the kitchen. My baking time is not interrupted as much and I play to my hearts content.

I had a blast using coffee and flavored creamers.

Those two recipes are guaranteed to cool you off during the sweltering heat of summer.

Ingredient Notes

  • coffee: use your favorite coffee or even espresso you would drink. You can even use flavored coffee.
  • vanilla extract: as usual I used my homemade vanilla extract. If you would like to make your own extract check out my DIY Vanilla Extract recipe for step by step photos and instructions.
  • butter: for the best results use real butter.

What better way is there to make some cupcakes? I love the way these cupcakes turned out.

The flavor of mocha is infused into the cupcake and frosting.

Make a delicious coffee flavored cupcake and frosting by adding mocha flavored Iced Coffee. The cupcakes are rich and delicious with the flavor of a mocha brownie and the texture of a cupcake.

Ingredients  

  • 1 ¼ cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • ½ stick butter
  • 1 cup packed brown sugar
  • 1 large egg
  • ⅓ cup buttermilk
  • ⅓ cup cold coffee
  • 1 teaspoon vanilla extract
  • 2 oz. semi sweet chocolate chips (melted)

Frosting

  • 3 ½ cups powdered sugar
  • ⅓ cup unsalted butter (softened)
  • ⅛ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup Mocha flavored coffee creamer

Instructions 

Directions for the cupcakes

  • Sift together all the dry ingredients into a bowl.
  • Cream together the butter and brown sugar in the bowl of a stand mixer or a large bowl. Add the egg and beat until creamy.
  • Add the buttermilk, cold coffee, vanilla extract and beat for 2 minutes.
  • Slowly drizzle the melted chocolate into the mixture while the mixer is running on low. Mix 1-2 minutes until the melted chocolate is combined well with the other ingredients.
  • Fill cupcake liners ¾ full.
  • Bake in a preheated oven at 350 °F degrees for 18 minutes.
  • Cool and frost with Mocha Frosting below.

Mocha Flavored Frosting

  • Cream the softened butter. Add the vanilla extract and salt. Beat well.
  • Add the powdered sugar one cup at a time. After the third cup of powdered sugar is beaten in the of Mocha Coffee Creamer. Beat until incorporated well. Add more powdered sugar if needed to stiffen the frosting. You can add up to an additional ½ if it needs it.
  • Frost the cold cupcakes with the frosting. You can use a piping bag and piping tip or a butter knife.
  • Store the cupcakes in the refrigerator.
  • Makes 12 cupcakes.

Recipe Expert Tips

  • Add more powdered sugar to the frosting if needed to make it a thick enough and stiff enough consistency to pipe the frosting.
