Make a delicious coffee flavored cupcake and frosting by adding mocha flavored Iced Coffee. The cupcakes are rich and delicious with the flavor of a mocha brownie and the texture of a cupcake.
Sift together all the dry ingredients into a bowl.
Cream together the butter and brown sugar in the bowl of a stand mixer or a large bowl. Add the egg and beat until creamy.
Add the buttermilk, cold coffee, vanilla extract and beat for 2 minutes.
Slowly drizzle the melted chocolate into the mixture while the mixer is running on low. Mix 1-2 minutes until the melted chocolate is combined well with the other ingredients.
Fill cupcake liners ¾ full.
Bake in a preheated oven at 350 °F degrees for 18 minutes.
Cool and frost with Mocha Frosting below.
Mocha Flavored Frosting
Cream the softened butter. Add the vanilla extract and salt. Beat well.
Add the powdered sugar one cup at a time. After the third cup of powdered sugar is beaten in the of Mocha Coffee Creamer. Beat until incorporated well. Add more powdered sugar if needed to stiffen the frosting. You can add up to an additional ½ if it needs it.
Frost the cold cupcakes with the frosting. You can use a piping bag and piping tip or a butter knife.
Store the cupcakes in the refrigerator.
Makes 12 cupcakes.
