I thought it was time to share this Jalapeno Thyme Margarita recipe what with my cocktail herb garden growing gangbusters.

Cinco de Mayo Cocktails

All Cinco de Mayo celebrations need a good margarita recipe. This herbal infused cocktail recipe features easy to make homemade thyme simple syrup made from the fresh thyme growing in my Cocktail Herb Garden.

Cocktails using Thyme syrup are amazing. Fresh thyme adds an unexpected earthly flavor to any cocktail.

You can use Lemon thyme (Thymus x citriodus) or German thyme (Thymus vulgaris) to make a simple syrup to flavor your cocktails.

Lemon thyme simple syrup will add a lovely light fresh lemon flavor to your herbal cocktails where German thyme will add an earthy herbal flavor.

How To Make a Jalapeno Thyme Margarita

Ingredients

  • 1 oz Jose Cuervo Silver Tequila
  • 1 oz lime juice (I used fresh key limes from my key lime tree)
  • ½ oz Triple Sec
  • thyme simple syrup (direction below)
  • salt
  • sprigs of fresh thyme
  • 1 sliced jalapeno pepper
  • lime wedges

Directions

  1. Rim a highball glass by swirling the lip of the glass in a shallow bowl with about an inch of thyme simple syrup.
  2. Immediately dip the syrup covered rim of the glass in a separate shallow bowl of salt. Set the glass aside while mixing the margarita in a cocktail shaker.
  3. Fill a cocktail shaker halfway full of crushed ice.
  4. Pour the Silver Tequila, lime juice, and Triple Sec into the cocktail shaker. Screw on the lid tightly, place the cover on and shake until well chilled.
  5. Fill a highball glass with crushed ice. Pour the Jalapeno Thyme Margarita into the highball glass.
  6. Garnish with jalapeno slices, lime wedges, and fresh thyme.
  7. Makes one Jalapeno Thyme Margarita.

How To Make Thyme Syrup

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 cup of fresh thyme leaves and stems

Directions

  1. In a small saucepan place one cup of water and one cup of sugar.
  2. On medium heat bring to a simmer. Simmer until the sugar has completely dissolved. Remove the saucepan from the heat.
  3. Put the fresh thyme stems and leaves into the pot and push down with the back of a spoon until the fresh thyme is covered with the liquid.
  4. Steep for one or two hours.
  5. Strain the syrup through a fine mesh strainer that has been lined with a coffee filter to remove the plant material.
  6. Store in an airtight container in the refrigerator.
  7. Make 1 cup of thyme simple syrup. Will keep for 1 to 2 weeks refrigerated.

Helpful Tips for making a spicy Margarita

  • Wear gloves or be very careful when slicing fresh jalapeno peppers.
  • Never rub your eyes after handling hot peppers.
  • If you don't have or can't buy key limes regular limes may be substituted.
