If you love homemade mac and cheese you are going to love this easy 15 minute Gouda Mac and Cheese recipe!

A bowl filled with Instant Pot Gouda Mac and Cheese.

It is the easiest homemade mac and cheese I have ever made. Instant Pot Mac and Cheese is one of my favorite pasta Instant Pot recipes.

Thanks to the Instant Pot you can serve up a big creamy cheesy bowl of homemade mac and cheese in less than 15 minutes!

Have you ever tasted the Gouda Mac and Cheese you can buy at Publix at the deli?

Oh my, that mac and cheese is so addicting. Every time I went into Publix for anything I had to buy myself a little cup of Gouda Mac and Cheese.

After paying for the Publix Gouda Mac and Cheese a couple of times I realized I could probably make it myself at home for much less.

I also knew if I made it in the Instant Pot (affiliate link) it would take a fraction of the time to make homemade mac and cheese than it normally did on the stove or in the oven.

I love a good homemade mac and cheese. My Crock Pot Mac and Cheese recipe is awesome but it takes a couple of hours to make in the slow cooker.

Now that I have an electric pressure cooker I can make the creamiest homemade mac and cheese in about 15 minutes.

I was craving Gouda Mac and Cheese this weekend when I made this Instant Pot Mac and Cheese.

You can use whatever type of real cheese you have on hand to make this Mac and Cheese recipe.

You could make a Sharp Cheddar Mac and Cheese recipe by using shredded sharp cheddar cheese instead of shredded smoked Gouda cheese.

Or you could use a combination of sharp white cheddar cheese and pepper jack cheese to make a cheesy and spicy Instant Pot Mac and Cheese.

Use whatever kind of real cheese you have on hand or you love the most to make this homemade Instant Pot mac and cheese recipe.

Mix up your favorite blend of real cheeses to make your own signature flavor of Instant Pot Mac and Cheese.

Ingredients

  • macaroni: I used large Sea Shell pasta because the shape actually holds creamy cheese sauce better. Other pasta options are large elbow macaroni.
  • water
  • cheese sauce: unsalted butter, warm milk, smoked Gouda cheese
  • seasonings: salt and ground black pepper

Directions

Step 1 cook the pasta: Place the pasta,  water, butter, salt, and pepper into a 6 quart Instant Pot and stir to combine.

Place the Instant Pot lid on and make sure the valve is in the closed position. Press the manual button and set the timer for 4 minutes to cook.

Quick release: As soon as the timer goes off switch the pressure cooker steam valve to the open position to release the steam quickly.

Once the steam has been completely released carefully open the lid and lift it away from your face. Turn the pot off and unplug it.

Step 2 make the cheese sauce: Add the warm milk and the shredded Gouda cheese to the insert pot. Stir until the cheese has melted and the cheese covers the macaroni.

Step 3: Serve immediately while the cheese is nice and creamy. Makes 8 servings.

Expert Recipe Tips

  • What type of macaroni noodles to use? You can use different shaped pasta noodle to make this recipe. Other noodle ideas would be large elbow, penne, and bow tie pasta.
  • Avoid mushy macaroni: Do not over cook the macaroni. Immediately quick release the steam and open the appliance because while the lid is on the pasta noodles will continue to cook.
  • Reheating cold macaroni and cheese: Add a small amount of milk to the cold mac and cheese before warming it in the microwave to thin the thickened cheese sauce.
