Instant Pot Brussels Sprouts with Bacon

Make delicious and tender Brussels Sprouts with bacon in less than 30 minutes for your Thanksgiving dinner side dish.

Cooking fresh vegetables in a pressure cooker is my favorite way to make my holiday side dish recipes.

I can quickly cook all my holiday side dish recipes like fresh green beans with bacon, Brussels Sprouts, green beans with baby potatoes and candied sweet potatoes on my counter.

This frees up the stove top and oven for the main course of roasted turkey or a baked ham.

Brussels Sprouts cooked in a pressure cooker are tender and fast to make. Fresh Brussels sprouts cooked with crispy bacon are done in about 21 minutes.

The mini cabbages will be tender and infused with the smoky flavor of the bacon.

Let's make the recipe

Prep: Before starting the recipe cut the bacon into small cubes and dice the onion. Trim the fresh Brussels sprouts and cut them in half.

Turn the sauté setting of the Instant Pot on. Once the pot gets hot add the cubed bacon pieces. Cook the bacon until it is brown and crispy.

Add the diced onion to the pot and sauté for about 2 minutes. Turn the sauté setting off once the onions are translucent and add one cup of chicken or vegetable broth to the pot.

Use a spoon to scrape the bottom of the pot and loosen and bits of bacon that may have stuck to the pot.

Add the Brussels sprouts to the Instant Pot.

Place the lid on. Twist the valve to the sealing position. Press the manual button and set the timer to 3 minutes.

When the pressure cooker beeps allow 2 minutes for a natural steam release before pressing the off button.

Push the valve to the open position and allow the steam to release. Then twist the lid off and lift it up away from your face.

Transfer the cooked Brussels Sprouts to a serving bowl. Keep warm until ready to serve.

When are Brussels sprouts done?

Brussels sprouts are done when they are tender but still a little firm.

How to cook fresh Brussels sprouts?

There are many different ways you can cook fresh Brussels sprouts. Brussels sprouts can be cooked in a pressure cooker, boiled in water, roasted in the oven and sautéed in a frying pan.

I like my Brussels Sprouts cooked enough that the leafy green mini cabbages are tender but still hold their shape. Overcooked Brussels Sprouts will fall apart and feel very soft and mushy.

Expert tips to make this recipe

  • Cut the larger Brussel Sprouts in half so they cook evenly.
  • You can use vegetable stock, chicken broth or water for the liquid.
  • Do not overcook the Brussels Sprouts or they will be mushy. 3 minutes pressure cooking with a 2-minute natural release of the steam is the perfect amount of time to cook 2 to 3 lbs. of fresh Brussels Sprouts.

Ingredients  

  • 4 slices bacon (diced)
  • ¼ cup diced onion
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup chicken broth
  • 2 lbs Brussels Sprouts (ends trimmed and any bruised leaves removed and cut in half)

Instructions 

  • Turn the Instant Pot saute setting on, add the diced bacon to the insert and saute the bacon until crispy.
  • Add the onions, salt and ground pepper to the Instant Pot and saute until the onion is translucent. Turn the saute setting off.
  • Add the vegetable or chicken broth to the Instant Pot and mix to combine the bacon, onions and salt and pepper. Add the Brussels Sprouts to the Instant Pot and toss to coat with the bacon pieces.
  • Place the lid on the Instant Pot making sure it is locked into place. Set the instant pot valve to the sealing position.
  • Push the manual button and set the timer for 3 minutes.
  • When the Instant Pot beeps notifying you that it has finished pressure steam cooking the Brussels sprouts allow the steam to release naturally for 2 minutes.
  • Use the handle of a long spoon to push the pressure valve to the open position. Allow the steam to release.
  • Carefully open the lid of the Instant Pot. Transfer the Brussel Sprouts to a serving bowl to serve.
