Did you catch my game day Chicken Fiesta Bowl Appetizer recipe last week? While I was making it I had a great idea for this Mini Guacamole Boats Appetizer recipe.
I am a relatively new avocado lover. I've only been eating them for a few short years. When I was a kid I tried them and hated them. For some reason, I remembered them tasting like soap.
Where I got that idea I have no clue. Maybe it was the type of avocado I ate when I was a child. I'm not sure but now I eat Hass avocados like there is no tomorrow.
I always have some on hand in various stages of ripeness for my salads or turkey wraps.
Last week while I was making the Chicken Fiesta Bowl Appetizer recipe I planned on topping them with a bit of guacamole.
Instead, I ended up mixing up some chunky guac and filling Old El Paso Mini Taco Boats with it. It's amazing how inspiration can strike when you have some extra ingredients on hand.
After mixing up the guacamole ingredients make sure you take a taste and adjust any of the flavors as needed. I'm not a big cilantro fan so you might like to add more if you love cilantro - same goes for the onions.
Kick your guacamole up a notch and use this homemade guacamole seasoning when you make it.
What is the trick to making chunky guacamole?
The trick to making chunky guacamole is to make sure your avocados are just a tad firm when picking them out. You don't want a rock hard avocado it won't mash up creamy. You want one that will yield to a little pressure of your finger tips but still be firm.
There is an art to picking out perfectly ripe avocados.
Practice makes perfect so I encourage you to eat as many avocados as possible until you "learn" the correct firmness to perfectly ripe avocados and slightly underripe avocados.
Guacamole Boats Ingredients
- 2 large Hass Avocados
- juice of 2 limes
- 2 tablespoons finely chopped tomato
- 1-2 heaping tablespoons finely chopped red onion
- 1- 2 tablespoons chopped fresh cilantro
- 1 tablespoon sour cream
- pinch of salt
- Old El Paso Mini soft flour tortilla Taco Boats
How to make Guacamole Boats
- Cut and scoop the avocados into a bowl.
- Immediately squeeze the lime juice over the fresh avocado.
- Mash the avocado with a fork or potato masher, being sure to leave some lumps.
- Add the remaining ingredients to the bowl and mix gently.
- Taste and adjust as needed.
- Place a layer of plastic wrap flush to the guacamole and refrigerate until ready to serve.
- To serve: Fill each Taco Boat with a tablespoon of chunky guacamole.
- Top with a dollop of sour cream, chopped tomato and chopped cilantro.
- Serve with your favorite salsa if desired.

Ingredients

- 2 tablespoons finely chopped tomato
- 1-2 tablespoons finely chopped red onion
- 1- 2 tablespoons chopped fresh cilantro
- 1 tablespoon sour cream
- 1 Pinch salt
- Old El Paso Mini soft flour tortilla Taco Boats
Instructions
- Cut and scoop the avocados into a bowl.
