Crock Pot Baked Sweet Potatoes

Ingredients

  • whole sweet potatoes, scrubbed clean
  • dark brown sugar
  • butter
  • ground cinnamon powder

Equipment

  • aluminum foil
  • 8 qt. slow cooker

Recipe Prep

  • wash and scrub the outside of each sweet potato with cold water.
  • poke holes all around each potato using a fork.
  • cut off one large sheet of aluminum foil for each sweet potato you will be slow cooking.

Directions

Step 1: Place a sheet of aluminum down on a flat surface. Place a pat of butter down on the aluminum.

Place a sweet potato on the butter. Place another pat of butter on top of the potato.

Sprinkle an ⅛ teaspoon of cinnamon and 2 tablespoons of brown sugar over the sweet potato.

Step 2: Wrap each sweet potato tightly in aluminum foil by folding one short edge of the aluminum up and over the sweet potato. Begin tucking the sides in tightly as you roll the foil around the potato to trap the butter, brown sugar and cinnamon in the aluminum with the sweet potato.

Repeat with the remaining sweet potatoes.

Step 3: Place the wrapped sweet potatoes seam side up into the crock pot. Place the lid on and cook on high for 3 to 5 hours.

The cooking time will vary depending on the size of the sweet potatoes and how many you have placed in the slow cooker.

Check the sweet potatoes half way through the cooking time by squeezing the center with a pair of tongs.

If the potatoes are still firm rotate them in the crock pot moving the lower potatoes to the top of the stack.

How to Serve Crock Pot Baked Sweet Potatoes

Carefully unwrap the foil, place the sweet potato in a bowl or on a plate. Cut down the center and fluff the center of the sweet potato with a fork.

Pour the melted butter, brown sugar and cinnamon over the potato with more butter if desired.

Can I put foil in the slow cooker?

Yes, just like baking in the oven with foil aluminum foil is safe to use in a slow cooker.

Do sweet potatoes take longer to cook than baked potatoes?

Sweet potatoes generally cook faster than Russet potatoes because they have less starch and a high moisture content. Keep in mind the size of the sweet potato you are baking. A very large sweet potato will take longer to bake. You can cut the bigger ones in half to help it cook faster.

Do you need to boil sweet potatoes before baking?

No. Boiling is not needed when baking sweet potatoes.

Instructions 

How to wrap the sweet potatoes in foil

  • Place a sheet of aluminum down on a flat surface. Place a pat of butter down on the aluminum. Place a sweet potato on the butter. Place another pat of butter on top of the potato. Sprinkle an ⅛ teaspoon of cinnamon and 2 tablespoons of brown sugar over the sweet potato.
  • Wrap each sweet potato tightly in aluminum foil by folding one short edge of the aluminum up and over the sweet potato. Begin tucking the sides in tightly as you roll the foil around the potato to trap the butter, brown sugar and cinnamon in the aluminum with the sweet potato.

Bake in the crock pot

  • Place the wrapped sweet potatoes seam side up into the crock pot. Place the lid on and cook on high for 3 to 5 hours.
  • Check the sweet potatoes half way through the cooking time by squeezing the center with a pair of tongs. If the potatoes are still firm rotate them in the crock pot moving the lower potatoes to the top of the stack. Recover and slow cook longer.
  • Once done carefully unwrap the foil, place the sweet potato in a bowl or on a plate. Cut down the center and fluff the center of the sweet potato with a fork. Pour the melted butter, brown sugar and cinnamon over the potato with more butter if desired.
  • If not serving immediately turn the crock pot onto the warming setting
  • Makes 5 servings
