I have been stocking my freezer with easy freezer meals so I can really enjoy the summer without having to worry about getting dinner on the table. Once you have a well-stocked freezer with make-ahead meals dinner time is really easy.

These Freezer Meal Cheesy Ranch Potatoes are even easier to cook because they are Crock Pot Cheesy Ranch Potatoes. Just thaw them out the night before and throw them in the crock pot a few hours before dinner is ready.

How to make Freezer Meal Cheesy Ranch Potatoes

Ingredients
  • 2.5 pounds baby red potatoes
  • 1 ½ cups shredded cheese
  • 10 oz can cheddar cheese soup
  • 1 envelope Ranch Salad Dressing and Seasoning Mix
  • ½ cup minced onion
  • 1 tablespoon dry parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup milk added during cooking.
Directions
  1. Wash and drain potatoes. Cut any large potatoes in half.
  2. Place all the ingredients into a gallon ziplock bag.
  3. Seal removing all air.
  4. Freeze flat on a cookie sheet.
  5. Once frozen remove cookie sheet and store in the freezer up to 3 months.

To Cook Freezer Meal Cheesy Ranch Potatoes

  1. Thaw Cheesy Ranch Potatoes in the refrigerator overnight.
  2. Preheat oven to 375 F.
  3. Pour ingredients into a 9x13 roasting pan and add ½ cup milk. Mix well.
  4. Cover pan with aluminum foil. Bake in pre-heated oven for 60 minutes or until the largest potato is fork tender and the sauce in bubbling.
  5. 15 minutes before done remove aluminum foil and top with 1-2 cups of additional shredded cheese if desired. Bake until cheese is melted.

    Just an FYI, Almost all veggies are recommended to be blanched before freezing to retain vitamins and not risk thawing/ cooking mushy. You didn't mention blanching them in some way...?
