I love making an easy summer fruit salad during the hot summer months. Berries, melons and all sorts of sweet ripe fruit are available this time of the year.

A plate with a serving of summer fruit salad.

Fruit salad is a popular barbecue side dish during the hot summer.

This simple melon and berry fruit salad is a sweet treat with a ginger honey fruit dressing.

Fresh fruit is sweet enough on its own but this simple honey and ginger dressing adds a slightly sweet and spicy flavor the the fresh fruit.

The mellow mint and ginger honey flavors is the perfect dressing for this melon and berry fruit salad.

Ginger infused honey

  • local honey
  • fresh ginger

Fresh Fruit for salad

  • summer fruit: cantaloupe, seedless watermelon , fresh blueberries, fresh strawberries, and fresh raspberries
  • mint leaves

Directions

  • Recipe Prep: Make the ginger honey the day before serving.
  • Step 1: Wash, peel and slice the ginger.
  • Step 2: Place the sliced ginger in a small pan and pour the honey in to cover the ginger pieces. Over a low heat warm the honey and ginger for 5 minutes.
  • Step 3: Remove the pan from the heat and allow to cool to room temperature.
  • Step 4: Transfer the honey and ginger pieces to a glass jar with a tight fitting lid. Cover the jar and store in a cool dark cabinet until ready to use. Can be made a week in advance to steep longer for a more intense ginger flavor.

For the fruit

  1. Wash and dry or drain all of the fruit.
  2. Cut and cube the cantaloupe and watermelon. Trim the tops off the strawberries and slice.
  3. Wash and dry the mint before mincing finely.
  4. Place all of the prepared fruit and the mint in a large bowl with a tight fitting lid. With a large spoon gently toss all of the fruit together to combine.
  5. Drizzle 2 - 4 tablespoons of ginger infused honey over the fruit and mix well.
  6. Chill for at least two hours before serving.
  7. Serve as a summer side dish.
