This Crock Pot Black Bean Chili recipe tastes awesome. I can't remember the last time I enjoyed a chili recipe so much.

I love black beans. So making a crock pot black bean chili recipe is another way to enjoy black beans at their best. Simmered in a slow cooker with pork stew meat, onions, peppers, and spices is a lovely way to enjoy these little legumes.

I love making chili in the slow cooker. White Chicken Chili , Tex-Mex Chicken Chili are some of my favorites. For picky eaters my Easy Crock Pot Chili Recipe will be a hit.

I like to serve chili with my Jalapeno Cheddar Corn Bread or a buttered slice of savory Bacon Cheddar Bread.

You can make this crock pot chili recipe vegetarian if you'd rather leave out the pork. If you decide to make a crock pot vegetarian black bean chili you should add more onions and peppers to make up for the loss of flavor from the pork.

You may also need to add a bit more of the spices. Towards the end of the cooking time take a taste and add a little more chili powder to your liking.

How to Make a Crock Pot Black Bean Chili Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1.5 lbs pork stew meat
  • two 14.5 oz cans diced tomato with Chiles
  • 1 green pepper, diced
  • 1 small onion, diced
  • 2 heaping teaspoons minced garlic
  • 1 tablespoon plus 1 teaspoon chili powder
  • 2 teaspoons ground cumin
  • 1 cup chicken broth
  • Three 14.5 oz cans black beans, drained and rinsed well

Directions

  1. Heat the olive oil in a large skillet, season the pork with salt and pepper then brown on medium high.
  2. Meanwhile, add the tomatoes, green pepper, onion, garlic, chili powder,cumin and chicken stock to a 4-quart crock pot set to high.
  3. Mix well. Add the pork to the crock pot once it has browned.
  4. Cover and cook 3 hours on high.
  5. After 3 hours add the black beans.
  6. Cook one more hour or until the beans have heated through.
  7. Adjust seasoning if needed.
  8. Serve with a sprinkle of cheese and a dollop of sour cream.
  9. Makes 6 servings.

  • 44 oz black beans (3 cans, drained and rinsed well)
