When I buy a family pack of boneless skinless chicken on sale I usually have a couple of pieces leftover from the meal I am cooking.
2 medium to large pieces is about 1 to 1 ½ pounds of chicken. That is the perfect amount of chicken to make chicken fajitas.

How to make freezer chicken fajitas
This is one of the easiest chicken freezer meals you will make. All you need is some seasoned boneless chicken, sliced bell peppers, and sliced onions. I am going to show you the easy way I do it with my step by step directions below. You can easily adjust the recipe to make the amount you will need for a meal.
Ingredient Notes
Below is the short list of 4 ingredients you need to make a batch of prep ahead fajitas that you will keep in the freezer for an easy weeknight meal.
When its time to cook just thaw and cook in a hot skillet. Add warm flour tortillas and your favorite topping for a full meal.

- boneless skinless chicken: I like white meat if you like dark use it.
- sliced bell pepper and onion: I used fresh but you could also use frozen if that is what you have on hand. Just add the frozen peppers and onion to the bag with the chicken.
- store bought fajita seasoning or 3 tablespoons my Gourmet Fajita seasoning.
Recipe Prep
- Prep the chicken, bell pepper and onion.
Step by Step Directions
Follow the easy step by step directions with pictures below. You can find the more detailed directions in the recipe card below.

- Step 1: Place the prepped chicken in a bowl and sprinkle with fajita seasoning. Toss to evenly coat the chicken with the seasoning.
- Step 2: Transfer the seasoned chicken to a quart size freezer bag, pushing it down into the bottom of the bag.
- Step 3: Add the sliced onion next. Top the onion off with the bell pepper strips.

- Step 4: Flatten the bag and push as much air out of the bag as possible. Zip the bag closed.
If you like to keep your freezer organized and your freezer meals easy to identify use a large easy to read label like the one I have available in my shop.
- Step 5: Clearly label the meal bag with the printable chicken freezer meal label in my shop or a marker.
- Step 6: Place the bag in the freeze flat so it is easy to stack in the freezer.

Storing Freezer Meals
I always flatten all my freezer bags so they are easier to stack in my freezer. Then I stack them or stand them up in clear bins I put in my freezer.
I use clear Plastic Storage Bins to organize my freezers and refrigerator. I usually pick them up at the dollar store but if you buy them in bulk online where they are a couple of dollars cheaper per bin. Make sure you check the measurements and make sure they will fit in your freezer first.
How to cook
- Step 1: Thaw the bag in the refrigerator overnight. It's important to keep the chicken cold so thawing on the counter is not a safe option.
- Step 2: Heat 2 tablespoons of olive oil in a large skillet. Add the thawed contents of the bag to the hot skillet. Cook, tossing frequently over medium high heat until the chicken is no longer pink in the center and is cooked through to 165 F. degrees.
- Step 3: Serve in warm flour tortillas with your favorite toppings.
- Serves: Makes 4 to 6 fajitas.

What can you make besides fajitas?
- Chicken fajitas: serve with shredded cheese and topping.
- Chicken fajita quesadillas: Sprinkle cheese on a flour tortilla and top with about 2 heaping tablespoons of this recipe. Top with more cheese and another tortilla. Heat in an ungreased skillet occasionally flipping until both sides are crispy and the cheese is melted.
- Fajita tacos or burritos: use as a taco or burrito filling instead of seasoned ground beef. Top with pickled red onions.
- Fajita rice bowls: Piling over cooked white rice and add topping.
- Fajita nachos: Pile over nacho chips and top with cheese, pickled jalapenos, sliced black olives
- swap out the chicken for beef: instead of using chicken thinly slice flank steak instead. Season the same.
Recipe FAQs
For best results, thaw in the refrigerator overnight. But you can cook from frozen by adding extra time and ensuring the chicken reaches a safe internal temperature. Start on a low heat until the meal has thawed than increase to medium high to make sure the chicken cooks through the center.
For the best flavor you should cook this freezer recipe within 3 months. Make sure to use airtight freezer bags or vacuum sealed bags to prevent freezer burn.
This recipe scales up very well, so make a big batch and portion it into separate freezer bags for multiple ready-to-cook meals.

Chicken Fajita Freezer Meal
Ingredients
- 1 lb. boneless skinless chicken (cut into thin strips)
- 1 large red bell pepper (seeded and cut into thin strips)
- 1 small yellow onion (peeled and cut into thin strips)
- 1 envelope envelope fajita seasoning (or 3 tablespoons my Gourmet Fajita Seasoning)
Instructions
Prep the ingredients
- Trim any fat from the 1 lb. boneless skinless chicken and cut into thin slices. Place in a bowl.
- Sprinkle 1 envelope envelope fajita seasoning over the sliced chicken. Toss to coat.
- Cut the top off 1 large red bell pepper, remove the seeds and cut into thin slices.
- Peel, cut off the ends and slice 1 small yellow onion.
Assemble the freezer meal
- Spoon the seasoned chicken into the bottom of a quart size freezer bag.
- Add the sliced onion to the bag.
- Add the sliced red bell pepper to the bag.
- Close the bag removing as much air possible while flattening the bag.
- Label the bag.
- Freeze flat for up to 3 months.
