A Blueberry Meyer Lemon Margarita it the perfect cocktail to celebrate Cinco de Mayo or just the fact that spring is on it's way.

Blueberry Meyer Lemon Margarita

I'm celebrating Spring and Cinco de Mayo with a Blueberry Meyer Lemon Margarita!

National Margarita Day was back in February and you could have been sipping on one of these sweet a lightly soured margarita's if you were lucky enough to find this margarita recipe back then.

If not have no fear. Who needs a national holiday to sip on one of these bad babies any way?

Celebrate National Margarita Day with a Blueberry Meyer Lemon Margarita

 Blueberry Meyer Lemon Margarita

The star of this margarita recipe is the fresh blueberries.

The gorgeous deep purple color of this margarita comes from making a simple syrup using fresh blueberries.

Blueberry Simple Syrup ingredients

A simple syrup is of course simple to make. Add the simple syrup ingredients to a small sauce pan, bring to a boil and then simmer.

Strain the blueberry pulp from the syrup and chill before making the Blueberry Lemon Meyer Margarita.

How to make blueberry simple syrup

Once the blueberry simple syrup has cooled and you are ready to make the Blueberry Meyer Lemon Margaritas prepare two small plates by squeezing the juice of ½ a Meyer lemon onto one plate. Sprinkle the second plate with salt.

Fill a cocktail shaker or quart size mason jar ¾ full of ice. Add the tequila, triple sec, Meyer lemon juice and blueberry simple syrup. Cover with a lid and shake.

Twist the rim of two glasses into the Meyer lemon juice then the salt. Fill the glasses with ice. Divide the Blueberry Lemon Margarita between the two glasses.

Garnish with fresh blueberries and lemon wedges.

Use a quart mason jar as a shaker to make these Blueberry Meyer Lemon Margaritas in celebration of National Margarita Day

Everything about this recipe sounds amazing! It's such a shame that meyer lemon season is so short lived- they add the most amazing flavor to anything you make with hem. Definitely pinning this!

I know. I always stock up on them when they are in season. You could always juice them and freeze the juice during the winter and enjoy them all summer long.
