Homemade Blueberry Lemonade Ice Pops

Homemade ice pops are one of those delightful summer treats adults and kids love.

A frozen popsicle can also help keep the kids cooled off and hydrated during the extremely hot summer we are having this year.

Homemade ice pops are easy to make. All you need is a popsicle mold, a liquid of some kind, and some fresh fruit.

Favorite Ice Pop Mold

Ice pop molds can be bought in just about any retail store these days. You can find them in all shapes and sizes. I always keep a few different ice pop molds on hand in various sizes.

A few years ago I invested in the Norpro Ice Pop Mold. I love this ice pop mold.

It is so sturdy I never have to worry about it tipping over in the freezer as long as you place it on a flat surface.

When you insert a popsicle stick into the lid they stay in place.

This ice pop mold makes 10 generous sized ice pops and has plenty of room in the individual molds to add as much fresh fruit as you like.

This summer ice pop recipe is made with fresh blueberries and frozen lemonade concentrate.

If you happen to have some fresh lemons on hand you can squeeze them and make fresh homemade lemonade to use in place of the lemonade concentrate.

You could use fresh lime juice and make blueberry limeade ice pops instead if all you have are limes on hand.

Strawberry Lemonade Ice Pops

If you have some fresh strawberries on hand you can make Strawberry Lemonade Ice Pops.

You will need one cup of fresh blueberries that have been rinsed under cold water and picked through for stems.

I added sliced lemons to the ice pop mold for a fun lip puckering treat. No fresh lemons on hand? No worries. Just add a bit more blueberries.

In a spouted measuring cup mix the lemonade concentrate and the water.

Lemonade Ice Pops

Prep

  • Rinse the fresh blueberries under cold water and remove any bruised fruit or stems. Set aside.
  • Scrub the skins of the fresh lemons well with a vegetable brush. Using a sharp paring knife slice the fresh lemon into ⅛ to ¼ thick slices. Cut the slices in half. Set aside.
  • If using frozen lemonade concentrate mix it with 3 cups of water in a spouted measuring cup. Set aside.
  • If using homemade lemonade mix freshly squeezed lemon juice with water and sugar.

Ingredients

  • 1 cup fresh blueberries
  • 2 lemons sliced thinly
  • ½ cup Lemonade concentrate
  • 3 cups of water

Directions

  1. Prepare the fruit and lemonade following the prep directions above before beginning.
  2. Place the ice pop mold on a baking sheet.
  3. Layer the fresh blueberries and lemon slices into the ice pop molds.
  4. Slowly pour the prepared lemonade into each ice pop mold stopping at the fill line.
  5. Wait a few minutes to allow the lemonade to settle in around the fruit pieces and add more lemonade as needed to bring the liquid up to the fill line.
  6. Place the lid on the ice pop mold and insert a wooden ice pop stick into each of the slots.
  7. Place the ice pop mold in the freezer and freeze overnight.
  8. Makes 10 large ice pops.
