Garlic Potatoes (best BBQ side dish)

Garlic Potatoes is a southern side dish and one of the best BBQ side dish recipes to serve with ribs, chicken, or steak.

This garlic potatoes recipe is so easy to make and only needs 2 ingredients plus some seasonings.

In less than an hour you can feed a crowd or your family the best tender buttery garlic potato side dish recipe of the summer.

This recipe was originally published on May 8, 2012 but has been updated June 8, 2021 with new photos and info.

We especially enjoy it as a bbq side dish with chicken or steak.

Ingredients to make the recipe

Butter garlic potatoes are easy to make on the stove with a short list of ingredients.

  • potatoes: unpeeled cubed red potatoes.
  • butter: unsalted or salted butter
  • garlic: fresh chopped or minced garlic. Jarred minced garlic is perfectly fine.
  • seasonings: salt, ground black pepper, smoked paprika, and parsley.

Recipe Step by Step Directions

Recipe prep: Scrub the outside of the potatoes clean with a brush to remove any dirt from the skin.

Step 1: On a cutting mat with a sharp knife carefully cut the potatoes into bite-size pieces. As you cut the red potatoes place them in a large bowl of cold water (to keep from browning) as you cut the remaining potatoes.

Once you have cut all of the potatoes rinse well under cold running water until the water is no longer cloudy to remove most of the starch. Drain well before cooking.

Step 2: Melt the butter in a large skillet over medium heat.

Adding cubed red potatoes to a hot skillet.

Step 3: Add the drained cubed potatoes to the hot skillet.

Adding the garlic potato seasonings to the pan.

Next add the minced garlic, salt, pepper and paprika to the skillet with the potatoes. Toss the potatoes well to coat with the butter and seasonings.

Step 4: Cover the skillet and cook, tossing occasionally until the potatoes are fork tender.

Ingredients  

  • 1 stick butter
  • 3 pounds red potatoes
  • 2 ½ tablespoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons smoked paprika

  • Keep the potatoes in the cold water until you are ready to cook.
  • Drain well before cooking.
  • Melt the margarine or butter in a large skillet over medium heat.
  • Add the drained potatoes, chopped garlic, salt, pepper and paprika to the skillet. Toss the potatoes well to coat with the butter and seasonings.
  • Cover the skillet and cook, tossing occasionally until the potatoes are fork tender.
  • Sprinkle the paprika over the cooked potatoes and stir to combine.
  • Serve with your favorite barbecue, chicken or beef recipes.
  • Six servings.
