BBQ Side Dish Garlic Potatoes
One of the best BBQ side dish recipes I make is this Skillet Garlic Potatoes recipe.
We love to have it along with the Best Baked Beans recipe I have been making for over 20 years.
Years ago my husband and I would occasionally eat at a local seafood restaurant that served a similar garlic potato recipe.
After eating there and enjoying the garlic potato side dish that was on the menu I decided to try to replicate it at home.
The restaurant is no longer in business but we still enjoy this copycat recipe all the time.
We especially enjoy it as a bbq side dish with chicken or steak.
How to Make Garlic Potatoes
Ingredients
- 1 stick of margarine or butter
- 3 lbs red potatoes
- 2 ½ tablespoons chopped garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tbs paprika
Directions
- Cut the potatoes into bite-size pieces and place in a large bowl of cold water (to keep from browning) as you cut the remaining potatoes.
- Once all the potatoes are cut up rinse well in cold water to remove most of the starch.
- Keep the potatoes in the cold water until you are ready to cook.
- Drain well before cooking.
- Melt the margarine or butter in a large skillet over medium heat.
- Add the drained potatoes, chopped garlic, salt and pepper to the skillet and toss well.
- Cover the skillet and cook, tossing occasionally until the potatoes are fork tender.
- Sprinkle the paprika over the cooked potatoes and stir to combine.
