Now that two of my three children are grown, living on their own, and have children of their own, we only have a big family breakfast every couple of months or on a special occasion like Christmas morning or Mother's Day.

Mother's Day Brunch Recipe
Every couple of years I like to host a Mother's Day brunch for the mother's in our family.
When I first started hosting Mother's Day brunch there were only three mothers in the family. Myself, my oldest daughter and my mother-in-law.
That year I thought it would be nice to honor my husband's mother on the one day of the year dedicated to celebrating motherhood.
I'll be hosting another Mother's Day brunch this May, and this Apple Cinnamon Bacon Breakfast Casserole recipe is going to be on the table.
Only this year I am going to have to double the recipe because now we have five mothers in the family that need to be celebrated on Mother's Day.
In this day and age of blended families, we had a new arrival on January 8th. My second granddaughter's mother delivered a new baby.
We all know how hard it is for a new mother to take care of herself right after having a baby. I needed an excuse to stop by and see the new baby.
Still warm from the oven, my Apple Cinnamon Bacon Breakfast Casserole was a good enough excuse to drop by just a few hours after mom and baby came home from the hospital.
I knew she would appreciate having a homemade breakfast to heat up the next morning because she would probably be exhausted.

I'm so glad she enjoyed it and that I could make her first morning home with the new baby a little easier for her.
I have to agree with her after sampling it myself warm from the oven. This breakfast casserole recipe is amazing.

To Make Apple Cinnamon Syrup
Ingredients
- ½ cup diced apples
- 1 cup syrup
- ½ teaspoon McCormick Good Morning Apple Cinnamon Breakfast Seasoning
Directions
Mix all of the ingredients together in a spouted glass and warm in the microwave. Pour over each Apple Cinnamon Bacon Breakfast Casserole serving.
How To Make Apple Cinnamon Bacon Breakfast Casserole
Ingredients
- one loaf Brioche Bread, cubed (about 8 cups bread cubes)
- 3 cups dice apples (about 5 medium apples, I used Golden Delicious apples)
- 1 tablespoon lemon juice (to prevent browning)
- ½ cup dark brown sugar
- 3 teaspoons McCormick Good Morning Breakfast Seasonings Apple Cinnamon
- 2 large eggs
- 2 cups heavy whipping cream
- 1 teaspoon McCormick pure vanilla extract
- 10 slices of cooked bacon, diced
- Preheat the oven to 375 Fahrenheit.
- Slice the Brioche bread into cubes and set aside.
- Dice the apples and place them in a bowl with the one tablespoon of lemon juice. Toss the apples well with the lemon juice to prevent browning.
- Add one teaspoon of McCormick Good Morning Breakfast Seasonings Apple Cinnamon and the brown sugar to the bowl of diced apples and toss well. Set aside.
- In a medium bowl whisk the eggs, whipping cream, vanilla extract, and one teaspoon of McCormick Good Morning Breakfast Seasonings Apple Cinnamon.
- Place half of the cubed bread in the bottom of a 9 x 11 baking pan.
- Spread half the cubed apples over the top of the bread.
- Sprinkle half the diced bacon over the apple pieces.
- Pour half of the egg mixture over the ingredients in the baking pan and sprinkle ½ teaspoon McCormick Good Morning Breakfast Seasonings Apple Cinnamon over top.
- Repeat layering the bread, apples, bacon and egg mixture in the baking pan one more time with the remaining ingredients.
- Sprinkle ½ teaspoon of McCormick Good Morning Breakfast Seasonings Apple Cinnamon over the top of the breakfast casserole.
- Set the baking pan aside for 10 minutes so the bread can absorb the egg mixture before baking.
- Bake for 35 to 45 minutes or until the custard has set. See recipe notes for more information on baking times.
- Remove the breakfast casserole from the oven and allow to come to room temperature before serving.

Recipe Expert Tips
- Baking times with vary depending on the size pan you use. If using an 9 x 13 baking pan bake for 35-45 minutes and check to see if the center is set. If not return to oven for an additional 10 minutes.
- I used an 8 x 11 inch baking pan and I bake this smaller pan size for 55 minutes.
