Celebrate a special day with family and friends with a special breakfast or brunch casserole.

Because we are such a busy family (I'm sure your family is very busy too) taking time out to have a special morning together can sometimes be difficult.

This Apple Cinnamon Bacon Breakfast Casserole is made using fresh and simple ingredients you probably already have at home.

It is packed full of sweet and savory breakfast flavors like apple, cinnamon and bacon.

Easy Weekend Family Breakfast Recipes

An occasional Sunday morning is the only time that we can all sit down for a meal together.

Now that two of my three children are grown, living on their own, and have children of their own, we only have a big family breakfast on a special occasion like Christmas morning or Mother's Day.

This easy breakfast casserole recipe is perfect for a Sunday morning or a special occasion with the family.

When I finally do get to plan a Sunday morning family breakfast I like to go all out and make an amazing breakfast or brunch recipe like this to celebrate the special occasion.

Mother's Day Brunch Recipe

Every couple of years I like to host a Mother's Day brunch for the moms in our family.

When I first started hosting Mother's Day brunch there were only three mothers in the family. Myself, my oldest daughter and my mother-in-law.

That year I thought it would be nice to honor my husband's mother on the one day of the year dedicated to celebrating motherhood.

I'll be hosting another Mother's Day brunch this May, and this Apple Cinnamon Bacon Breakfast Casserole recipe is going to be on the table.

Only this year I am going to have to double the recipe because now we have five mothers in the family that need to be celebrated on Mother's Day.

Apple Cinnamon Breakfast Casserole recipe

Ingredients

  • one loaf Brioche Bread, cubed (about 8 cups bread cubes)
  • 3 cups dice apples (about 5 medium apples, I used Golden Delicious apples)
  • 1 tablespoon lemon juice (to prevent browning)
  • ½ cup dark brown sugar
  • 1 tablespoon McCormick Apple Cinnamon seasoning or ground cinnamon, divided
  • 2 large eggs
  • 2 cups heavy whipping cream
  • 1 teaspoon pure vanilla extract (try making homemade vanilla extract)
  • 10 slices of cooked bacon, diced

Directions

  1. Preheat the oven to 375 Fahrenheit.
  2. Slice the Brioche bread into cubes and set aside.
  3. Dice the apples and place them in a bowl with the one tablespoon of lemon juice. Toss the apples well with the lemon juice to prevent browning.
  4. Add one teaspoon of McCormick Good Morning Breakfast Seasonings Apple Cinnamon and the brown sugar to the bowl of diced apples and toss well. Set aside.
  5. In a medium bowl whisk the eggs, whipping cream, vanilla extract, and one teaspoon of McCormick Good Morning Breakfast Seasonings Apple Cinnamon.
  6. Place half of the cubed bread in the bottom of a 9 x 11 baking pan.
  7. Spread half the cubed apples over the top of the bread.
  8. Sprinkle half the diced bacon over the apple pieces.
  9. Pour half of the egg mixture over the ingredients in the baking pan and sprinkle ½ teaspoon  McCormick Good Morning Breakfast Seasonings Apple Cinnamon over top.
  10. Repeat layering the bread, apples, bacon and egg mixture in the baking pan one more time with the remaining ingredients.
  11. Sprinkle ½ teaspoon of McCormick Good Morning Breakfast Seasonings Apple Cinnamon over the top  of the breakfast casserole.
  12. Set the baking pan aside for 10 minutes so the bread can absorb the egg mixture before baking.
  13. Bake for 35 to 45 minutes or until the custard has set. See recipe notes for more information on baking times.
  14. Remove the breakfast casserole from the oven and allow to come to room temperature before serving.

Recipe Expert Tips

  • Baking times with vary depending on the size pan you use. If using an 9 x 13 baking pan bake for 35-45 minutes and check to see if the center is set. If not return to oven for an additional 10 minutes.
  • I used an 8 x 11 inch baking pan and I bake this smaller pan size for 55 minutes.
