Instant Pot Red Potatoes

I made Instant Pot Red Potatoes and used them for my favorite potato salad recipe. Quickly cook potatoes for any of your favorite recipes in a pressure cooker.

This Instant Pot recipe for red potatoes makes a creamy and tender potato you can serve any way you like or use the cooked potatoes to make your favorite potato recipe.

You can pressure cook all your favorite vegetables like sweet and tender corn on the cob, butternut squash, Brussel sprouts, and green beans and have them ready to serve in no time at all.

Instant Pot Electric Pressure Cooker Red Potatoes

Before I had a pressure cooker I would pile all my red potatoes in a huge pot, fill it with water, salt the water and boil the potatoes on the stove.

It could take anywhere from 30 minutes to an hour from start to finish.

I would have to keep a close eye on the pot full of red potatoes to make sure it didn't boil over, keep the water level above the potatoes, and move the potatoes around in the pot so they would cook evenly.

It was a big pain!

That was how I would boil potatoes for all potato salads like Red Skin Potato Salad.

Enter the Instant Pot electric pressure cooker and it took about 30 minutes for the red potatoes to cook.

And all I did was load the potatoes in, add the water and push a button!!

It was so much easier cooking the potatoes in the Instant Pot versus cooking them on the stove.

Especially when you love making Potato Sides for Ribs like I do over the summer.

Fork Tender Instant Pot Pressure Cooker Red Potatoes

Instant Pot Red Potatoes Ingredients

  • 5 lbs. whole red potatoes (not baby potatoes)
  • 1 cup water
  • ½ teaspoon salt

How to make Instant Pot Red Potatoes

  1. Scrub and wash potatoes well. Place the rack in the bottom of the Instant Pot and add the water. Stack potatoes into the electric pressure cooker.Place the lid on.
  2. Cook on the steam setting 10 minutes. Let pressure cooker release steam naturally. Open and check potatoes.
  3. If not fork tender re-close the pressure cooker and set to the steam setting and cook an additional 3-5 minutes and allow the pressure cooker to release steam naturally for about 25 minutes before opening.
  4. Immediately remove the potatoes from the Instant Pot and run under cold water to cool off and to stop the potatoes from cooking.
  5. Peel potatoes if desired and cut up into pieces in a large bowl if making homemade potato salad.

  • Makes about 4 pounds of peeled steamed potatoes.

Recipe Expert Tips

  • Cooking times: If using extra large potatoes and they are not fork tender after you have cooked them reclose the pressure cooker and set to the steam setting and cook an additional 3-5 minutes

    I see salt in the recipe but no mention of when you add it....I’m assuming it goes in with the water before cooking?

        When you use the steam function do you close the vent or leave it open?

        You need to close the vent or the instant pot will not come up to pressure.

        Rosemary the vent should be closed or the pressure cooker will not reach pressure and start the steaming process.

    I over looked the STEAM setting instruction. Now we’re having mashed potatoes instead of potatoe salad. Bummer.

        I have just bought my instant pot and cooking potatoes last eveneing was only my third time to use it. While I find it very easy to use, my potatoes were a little sticky. Is this a common result of steaming vs. boiling potatoes? I used them for potatoe salad so it wasn't a deal breaker, but if I had planned on whipped potatoes it would have been. Suggestions?

      LOL! The first thing I said was "Do I have a Steam Button?" Then had to check. I also just noticed the Multigrain one. I wonder what I can make with that?
