Florida Sweet Corn on the grill or the stove is sweet to eat.
Since I live in Florida we eat Florida sweet corn all year long. But every Spring around Easter, during the peak season that runs from April thru May the produce departments are briming with Fresh Sunshine Sweet Corn at great prices.
One of our favorite ways to enjoy Florida sweet corn is to grill it. But we also enjoy it boiled on the cob. When the prices are so good I have to stock up I will flash boil the corn on the cob and either freeze it whole or cut the kernels off the cob and freeze it in baggy so I have fresh sweet corn when ever I need it.
One of the most important things you should do when buying fresh corn is store it properly if you are not using it the day of purchase. Here is a great video showing how to properly store sweetcorn so it stays sweet and fresh.
You’ve got your pick of yellow, white, and bi-colored sweetcorn. Our favorite is white and I was surprised to read that bi-colored is the most popular and accounts for over 60% of corn harvested in Florida.
Did you know that eating sweet corn is a healthy way to add whole grains and fiber to your diet? It also is a source of two antioxidants that promote eye health and may also help keep your heart healthy?
Here is something I learned that made me very happy. There is much talk about GMO corn in the news.
Supersweet varieties are the result of traditional breeding methods, are 100% natural and are NEVER genetically modified.
So just make sure when your buying Florida sweet corn that you are buying a SuperSweet variety to avoid gmo corn.
When we grill corn we like to wrap it up in tin foil with some seasonings. This keeps all the moisture locked into the corn cob and guarantees a sweet juicy ear of corn.
My picture didn’t turn out very well but this is what I do.
I place an ear of corn on the aluminum foil, add about a tablespoon of butter or margarine and sprinkle with garlic salt and pepper.
I then wrap it up tight so the butter and seasoning can’t drip out of the aluminum foil.
It goes on the grill for 15 minutes. Turning occasionally. After fifteen minutes move it off the hot coals and keep warm while cooking the rest of your meal.
