Some people might consider beef nachos an appetizer. Nachos are the perfect appetizer or snack when your sitting around watching a movie. It is beefy, cheesy, crunchy and can be as spicy as you like. But, I love eating appetizers as a meal. Another great appetizer that is delicious as a meal is Loaded Tater Tots.

Appetizer recipes are a great way to stave off hunger during a party, but I love turning my favorite appetizers into meals. Why should a delicious and filling recipe be a snack food?

What is your favorite appetizer recipe that you enjoy eating as a meal?

How to make a Shredded Beef Nachos Recipe

Ingredients

  • 2 cups shredded beef. I used my Crock Pot Shredded Beef for these nachos
  • Your favorite bag of flour tortilla chips
  • 1 ½ cups shredded Mexican blend cheese, divided
  • pickled jalapenos to taste. Sometimes I like to top my nachos with pickled red onions too
  • ¼ cup salsa or my Homemade Pico de Galo
  • sour cream
  • Tomatillo salsa (optional)

Directions

  1. In a nine inch, oven safe skillet or baking pan spread a layer of tortilla chips.
  2. Spread half the shredded beef, the desired amount of jalapenos, ⅛th cup of the salsa and ½ cup of cheese over the chips.
  3. Repeat the layer beginning with the chips again and ending with 1 cup of shredded cheese
  4. Bake in a preheated 375-degree oven for 10 minutes or until the cheese is melted.
  5. Top each serving with sour cream, your favorite salsa or homemade tomatillo salsa.
