This Rotisserie Chicken Salad recipe is packed full of flavor and a perfect lunch option for the summer.
If you love deli style chicken salad you are going to love the flavor of chicken salad made with a store bought rotisserie chicken.
This recipe only takes a few minutes to make.
And if you can wait a little bit and refrigerate it for a few hours or overnight the flavor only gets better.
We used to buy a delicious chicken salad from our local Sweetbay and Winn Dixie grocery stores but they both closed down.
This is my version of those grocery store chicken salad recipes.
This Rotisserie Chicken Salad tastes great in a wrap or on a ciabatta bun. Serve it with my Broccoli & Tomato Pasta Salad recipe and you have a nice little meal.
Ingredients
- one rotisserie chicken
- a combination of red, green, and yellow bell peppers, diced
- celery, finely diced
- yellow, white or red onion, finely diced
- sliced green olives: are optional
- sweet pickle relish
- seasonings: salt, ground black pepper and celery seed
- mayonnaise: I use Hellman's or Dukes.
- sour cream
Directions
Step 1: Remove the skin from the rotisserie chicken and pull the meat from the bones. Finely dice the chicken and place in a bowl.
Step 2: Add the diced bell peppers, diced celery, diced onion, sliced olives (if using) and sweet pickle relish to the bowl with the cubed chicken. Use a large spoon to toss all the ingredients together.
Step 3: Add the mayonnaise and sour cream to the bowl. Toss until combined well.
Step 4: Season the salad with salt and black pepper to taste.
Step 5: Cover the bowl and refrigerate for 2 hours or overnight before serving.

Rotisserie chicken salad will last up to five days if refrigerated and stored in an airtight container. Never leave chicken salad on the counter to get warm. Any recipe made with mayonnaise should be refrigerated as soon as possible.

- 1 whole rotisserie chicken (, meat pulled from the bones)
- ¾ cup mayonnaise
- ¼ cup sour cream
- ½ cup finely diced red (green, yellow and red pepper)
- ¼ cup finely dice celery
- ¼ cup sliced green olives
- 2 tablespoons finely diced onion
- ½ teaspoon ground pepper
- ½ teaspoon salt
- 1 teaspoon celery seed
- ¼ cup sweet relish (optional)
- 4 Medium Ciabatta rolls
Instructions
- Pull all the meat from the chicken and finely dice.
- Add the finely diced chicken and remaining ingredients to a bowl and mix well.
- Refrigerate for at least 2 hours before serving.
- Serve on a ciabatta roll or sliced bread with pasta salad.

Nice recipe but the olives really have no place in a chicken salad. Try adding shredded carrot and dried cranberries.

Have you ever tried olives in chicken salad? Thanks for suggesting carrots and cranberries. I would try the cranberries but to me carrots have no place in my chicken salad. To each his own I always say!
