  • Sweetened condensed milk
  • Fresh lemon juice
  • Crushed pineapple, drained. Buy a can or make crushed pineapple at home.
  • Sweetened coconut flakes, divided
  • Pecan halves, roughly chopped
  • Maraschino cherries, roughly chopped
  • Cool Whip topping

  • Step 1: In a large bowl, combine the sweetened condensed milk, lemon juice, drained pineapple, 1 cup of shredded coconut, chopped pecans, chopped cherries, and Cool Whip.

Ingredients  

  • 14 oz. can sweetened condensed milk
  • ¼ cup fresh lemon juice
  • 20 oz. can crushed pineapple (drained)
  • 1 ½ cup sweetened coconut flakes (divided)
  • ½ cup pecan halves (roughly chopped)
  • ½ cup maraschino cherries (roughly chopped)
  • 8 oz Cool Whip

Instructions 

  • Mix the sweetened condensed milk, lemon juice, drained pineapple, 1 cup of coconut flakes, the chopped pecans, chopped cherries and the Cool Whip in a large bowl.
  • Tightly cover the bowl and refrigerate at least 2 hours before serving.
  • Garnish the bowl with remaining ½ cup of shredded coconut and top with a whole cherry before serving.
  • Serve in a pretty cup or dessert bowl.
