Ever since I saw this Funfetti Ooey Gooey Bars recipe shared by Tonia on her The Gunny Sack site I have wanted to use those bright Funfetti Cake Mixes to make a dessert bar recipe.

When I make dessert bar recipes I love to make multi-layered cake bars. I like to mix flavors. I think there should be a surprise in the middle. Sandwiched between the cake and frosting or topping there should be something extra special.

 

These Lemon Blueberry Funfetti Cake Bars are filled with lemon curd and a blueberry sauce filling like I used in this Blueberry Cheesecake Pudding Parfaits recipe.

If you don't have the time to make some homemade blueberry sauce you can use canned blueberry pie filling instead.

You also have the option of using store-bought cream cheese frosting or you could use this easy to make homemade Cream cheese frosting recipe I used for my Old Fashioned Carrot Sheet Cake recipe.

Have you ever used the bright and colorful Funfetti Cake Mixes? I made this gorgeous Purple Funfetti Cake for Easter a few years ago. It is so pretty and would be perfect for a little girls birthday party.

I've also made cake pops with the green and blue funfetti cake mix. I never shared those cake pop recipes but I made some that were for a little boys dinosaur themed birthday party. They turned out so cool. The kids loved them.

How to Make Lemon Blueberry Funfetti Cake Bars

Ingredients

  • 8.25 oz package yellow Funfetti cake mix
  • 1 egg
  • ¼ cup oil
  • ¼ teaspoon lemon extract
  • ½ cup lemon curd or lemon pie filling
  • ½ cup blueberry pie filling or homemade blueberry sauce
  • 1 container cream cheese frosting or homemade Cream Cheese Frosting

Directions

  1. Prepare an 8 x 8 baking pan by lining it with parchment paper.
  2. Mix the cake mix, oil, egg and lemon extract.
  3. Spread the batter into the bottom of the prepared pan.
  4. Bake for 12 minutes in a preheated 350-degree oven.
  5. Allow cake to cool completely in the pan.
  6. Once the cake is cool spread the lemon curd over the top.
  7. Next carefully spread the blueberry pie filling over the lemon curd.
  8. Cover and chill for about 30 minutes.
  9. Next spread the cream cheese frosting over the top.
  10. Sprinkle with the multi-colored sprinkles.
  11. Cover and chill until ready to serve.
  12. Cut into squares before serving.
  13. Makes 9 Servings
