Grilled Vegetables

This is the 4th post in a five part series where I will take you from start to finish on your quest to make a perfect grilled pizza. In this post I will show you how to make delicious grilled vegetables to top your grilled pizza. When you make grilled vegetables the sugars in the vegetables caramelize bringing a deep rich flavor out of the vegetables. Grilled pizza needs grilled vegetables in my opinion. 

To top my grilled pizza I decided to grill some peppers, onions and tomatoes. You can grill whatever vegetables you have on hand to top your grilled pizza.

How to grill vegetables

For this recipe I have grilled heirloom tomatoes, green peppers, red peppers and sweet onions that I will use to top my grilled pizza . But almost any vegetable can be grilled the same way.

For peppers, onions and tomatoes slice them thickly. Coat them with olive oil so they don't stick to the grill. Place the vegetables on the hot grill in a single layer.

For the peppers and onions turn them every couple of minutes.

Tomatoes need to be handled carefully because they are soft.

Tomatoes should only to be turned once. Be careful that you only grill the tomatoes for about 5 minutes on the first side and about 2 minutes on the second side.

If the tomatoes are very ripe carefully turn them with a spatula. If the grilled tomatoes are over cooked they will turn mushy and fall apart. Slightly under ripe tomatoes work much better.

Grill the vegetables (except the tomatoes) until they are tender and have those lovely blacked grilled edges.

Ingredients  

  • 2 large sliced tomatoes
  • 2 large sliced green pepper
  • 2 large sliced red pepper
  • 2 large sliced onion

Instructions 

  • Thickly slice the tomatoes, onions and peppers.
  • Separate the onion rings.
  • Spread the vegetables out on a cookie sheet.
  • Brush the vegetables with olive oil on both sides.
  • Place the vegetables in a single layer on a smoking hot grill.
  • Tomatoes only need to be turned once. Be careful that you only grill the tomatoes for about 5 minutes on the first side and about 2 minutes on the second side.
