When school day or work day mornings are hectic it can be hard to eat a healthy breakfast. Breakfast Burritos are the perfect busy morning breakfast option.

Breakfast burritos are very easy to make and freeze very well.

They heat up fast in the microwave so you can serve breakfast in just a couple of minutes from freezer to microwave.

If the kids don't like Picante sauce used in Mexican breakfast burritos you can just make them a plain egg and cheese breakfast burrito instead.

I love Mexican Breakfast Burritos so much I occasionally eat them for dinner.

Mexican style breakfast burritos are made with real ingredients like burrito size flour tortillas,  scrambled eggs, chunky Picante sauce, sour cream, and shredded cheese.

You can even make these breakfast burritos low carb by using low carb wraps.

Today I am sharing a Mexican Style Breakfast Burritos recipe but you have so many options when you are filling breakfast burritos.

You can make plain egg and cheese breakfast burritos for picky eaters.

You can make bacon, egg and cheese breakfast burrito by cooking the bacon until crispy, chopping it roughly and layering scrambled eggs, cheese, and bacon in a burrito size flour tortilla.

Need a hearty breakfast burrito recipe? Cook some southern style hash browns, scramble some eggs and layer the hash browns, eggs, and cheese in a burrito size tortilla.

Breakfast Burritos are perfect for breakfast on busy mornings, a breakfast burrito brunch or even dinner.

How To Make Freezer Mexican Breakfast Burritos

Ingredients

  • 12 large eggs
  • 16 once jar Pace Picante Sauce, divided
  • ¼ cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 tablespoon butter
  • 8-ounce bag finely shredded Mexican Style Cheese
  • 16 flour burrito size tortillas
  • 4-ounce sour cream

Directions To Make Mexican Breakfast Burritos Filling

  1. In a large bowl beat the eggs, ¾ cup Picante sauce, milk, salt, and pepper until combined.
  2. Melt the butter in a large skillet and pour the egg mixture into the pan. Cook the eggs until fluffy and cooked through.
  3. Place a fine mesh strainer in a bowl and pour the cooked eggs into the strainer to drain. (see helpful tips)
  4. Allow the eggs to cool to room temperature.

To assemble the Mexican Breakfast Burritos

  1. Lay a burrito size flour tortilla down on your work surface.
  2. Spread one teaspoon of sour cream in a line off center of the tortilla.
  3. Spread ⅓ cup of the cooked eggs on top of the sour cream.
  4. Sprinkle about 2 tablespoons of shredded cheese over the eggs.
  5. Top the cheese with about 2 teaspoons of Picante sauce.
  6. Fold the sides of the tortilla in over the filling and roll the bottom edge of the tortilla up and over the filling to form a burrito.
  7. Set the filled breakfast burrito on a cookie sheet or platter. Fill the remaining tortillas repeating the steps above.
  8. Makes 16 Mexican Breakfast Burritos.

How To Wrap Freezer Mexican Breakfast Burritos for Freezing

  1. Wrap each Mexican breakfast burrito in a double layer of plastic wrap.
  2. Place the wrapped breakfast burritos into Ziploc bags and place in the freezer.

How to heat frozen Breakfast Burritos

Remove one or two breakfast burritos from the Ziplock bags. Remove the plastic wrap from each burrito.

Wrap the breakfast burritos in a paper towel and microwave on 1 minute.

Flip the breakfast burrito over and heat for an additional 30 to 60 seconds until heated through and the cheese has melted.

Microwave cooking times will vary depending on how many breakfast burritos you are heating and your microwave settings.

Helpful tips to Make Mexican Breakfast Burritos

  • The eggs will have some moisture from the Picante sauce. Strain the eggs to remove the liquid so the breakfast burritos do not get soggy.
  • The eggs can be scrambled and refrigerated a day ahead if needed before assembling the burritos.
  • Make these breakfast burritos low carb by using low carb flour tortillas.

    These look terrific. I always add some diced onion and red bell pepper into my egg mixture before I scramble eggs for breakfast burritos. Do you think that would make the egg mixture to moist and result in soggy tortillas?
