Freezer Meal-Cheesy Cauliflower Soup

This Freezer Meal-Cheesy Cauliflower Soup recipe is delicious on a cool fall evening. Now that school is back in session it is time to stock the freezer with easy freezer meals for those busy school nights.

It has been a while since I shared a freezer meal recipe. I actually took the photos for this Freezer Meal Cheesy Cauliflower Soup recipe over a year ago. I can't believe it. I've made this delicious cheesy cauliflower soup recipe so many times in the past year.

Besides the fact that it is a low carb option for someone who is following a low carb or Paleo diet it is one of the best soup recipes I make.

Cheesy Cauliflower Soup is one of my favorite cauliflower recipes. It is one of those rich creamy soup recipes that is very filling and so satisfying because cauliflower is packed full of fiber.

I love cauliflower and eat it as much as possible. I will throw some cauliflower florets into many of my homemade soup recipes if I happen to have a head of cauliflower in the fridge.

This Freezer Meal Cheesy Cauliflower recipe can be made in a crock pot or can be cooked on the stove.

How to Make Freezer Meal-Cheesy Cauliflower Soup

Ingredients
  • 4 cups of fresh cauliflower florets
  • 4 cups chicken or vegetable broth
  • ½ cup sliced celery
  • ¼ cup diced onion
  • ¼ cup sliced carrot
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 16 ounces Monterrey Jack Cheese, shredded
  • 1 cup heavy whipping cream
  • 1 tablespoon cornstarch
  • 3 tablespoons milk or cream
Freezer Meal Directions
  1. Place the first 8 ingredients into a gallon ziplock bag.
  2. Remove air and freeze flat.
  3. The heavy whipping cream,  cornstarch,  and milk or cream will be adding during the cooking time.
Directions To cook Cheesy Cauliflower Soup on the stove
  1. Thaw in the refrigerator over night.
  2. Pour the ingredients of the bag into a large pot.
  3. Bring to a boil, lower heat and simmer for about an hour or until the cauliflower is tender.
  4. Once the cauliflower is tender add the cream and cheese to the pot.
  5. Mix well and continue cooking until cheese has melted.
  6. Mix the cornstarch with the milk or cream in a small bowl then stir into the pot.
  7. Increase heat and bring to a boil.
  8. Stir until thickened then serve immediatly.
  9. Make 4-6 servings.

Ingredients  

  • 4 cups fresh cauliflower florets

Instructions 

Make the freezer meal

  • Once the cauliflower is tender add the cream and cheese to the pot. Mix well and continue cooking until cheese has melted.
  • Mix the cornstarch with the milk or cream in a small bowl then stir into the pot.
  • Increase heat and bring to a boil.
  • Stir until thickened then serve immediately.
  • Make 4-6 servings.
