Dry Vegetable Soup Mix
This easy to make dry soup mix recipe is a perfect recipe using dehydrated vegetables and dried herbs to make a ready to make dried soup mix that can be stored in the pantry.
Once combined all you need to do is add water or broth, bring it to a boil to rehydrate the vegetables and in a short time you will be enjoying a bowl of vegetable soup made with dehydrated vegetables you preserved from the garden.

Below is the list of dehydrated vegetables and amounts I used to make this vegetable soup mix. You can add any favorite dried vegetables you have to make your own vegetable soup version. Or you could use Dehydrated frozen vegetables to make the soup mix.
When combined this recipe makes enough dried vegetables to split between two 16 ounce pint mason jars. Each jar will make 4 cups of cooked soup.
- 1 cup dehydrated cubed potatoes
- ½ cup dehydrated corn kernels
- ½ cup dehydrated carrots
- ½ cup dehydrated yellow squash
- ½ cup dehydrated zucchini
- ½ cup dehydrated green beans
- ½ cup dehydrated peas
- ¼ cup dehydrated onion
- 4 cups of vegetable or chicken stock
- Vegetable Soup Seasoning Blend below
Vegetable Soup Spice Seasoning Blend
Important Note: Mix the soup spice seasoning blend for each jar separately before adding to the jar of dried vegetables. The soup seasoning blend is made with the perfect amounts of herbs and spices to season one jar of dried soup vegetables.
Use to make soup with 1 pint jar of freeze dried or dehydrated soup vegetables:
• 2 teaspoon dried parsley or dehydrated parsley
• 1 teaspoon dried thyme
• 1 teaspoon garlic powder
• 1 teaspoon salt
• 1 teaspoon black pepper
• ½ teaspoon onion powder or dehydrated onion flakes
• 2-3 whole dried bay leaves
You will need to double the ingredient amounts for this soup seasoning mix to flavor both jars. Just make sure you mix the amounts for one jar at a time because if you mix it all together and try to divide it between the two jars the combination of seasonings will not be correct and it will effect the flavor of the soup.
You may end up with more of some seasonings in one jar and not enough in the other jar.

Soup Mix Recipe Prep
You will need to have all of the dehydrated vegetables made for this recipe ahead of time.
Step by Step Directions
Makes 2-16 oz. pint jars of dried soup vegetables:
- Step 1: Combine all the dehydrated vegetables in a large bowl. Mix well to combine.
- Step 2: Divide the dry soup vegetables between two-pint size jars. Add one batch of soup seasoning blend to each jar. You can also mix the soup seasoning blend separately and store in small 4 oz. canning jars or vacuum sealed in small mylar bags.
- Step 3: Vacuum seal the jars for longer storage.
To Make Soup:
- When ready to use, add 4 cups of vegetable or chicken broth to a large pot and bring it to a boil.
- Stir in 1 pint jar of the dried vegetable soup mix with seasoning blend.
- Simmer for 20-30 minutes, or until the vegetables are rehydrated and tender.
- Add more broth or water if needed. Adjust the salt and pepper to taste and serve with crusty bread or crackers.
Optional Add Ins
When cooking for a heartier soup here are a few optional add ins:
- add fresh spinach or kale leaves
- add diced boneless skinless chicken to the soup pot
- add ¼ cup of wide egg noodles or instant rice to the pot after the vegetables have rehydrated. you may need to add more broth because the dried vegetables and pasta or rice will absorb the broth as they cook.
