Crock Pot Pork Black Bean Corn Soup

Crock Pot Pork Black Bean Corn Soup is a very easy summer crock pot soup recipe and is a great way to use up the leftover corn on the cob from your weekend barbeque.

I am always looking for ways to use my leftover corn on the cob whenever we have a barbecue.

I can't stand to waste the leftover corn on the cob so I have to come up with a recipe or two to use it up!

You know waste not, want not as my Nanny used to say!

This crock pot summer soup recipe is packed full of some of my favorite ingredients. I used ground pork that I browned in a skillet and drained very well.

Black beans have got to be my favorite canned bean and this soup recipe is packed full of the fiber beans have. I also used a couple of leftover corn on the cob I had from another recipe I made for the site.

As you may know, I live in Florida and Florida sweet corn is in season!

Florida sweet corn is one of my favorite summer vegetables and is at the height of the summer season. As you know buying fresh fruits and vegetables when they are in season will give you the best bang for your grocery shopping buck.

I, of course, bought a whole bunch of Florida sweet corn and then had to figure out what I was going to do with it. I decided to make Instant Pot Corn On The Cob.

Even after we ate the sweet corn for dinner I had a bunch of corn leftover.

Pork Black Bean Corn Soup recipe served in a green bowl is a great recipe for leftover corn.

What To Do with Leftover Corn On The Cob?

When I have leftover corn on the cob I will cut the cooked corn kernels off the cob to use in another recipe.

Or I will pack a few zip lock bags full and tuck them away in the freezer for another day.

I haven't eaten any soup lately and I love homemade soup! I decided to make this Crock Pot Pork Black Bean Corn Soup recipe using some of my leftover Instant Pot Corn On The Cob, browned ground pork and canned black beans.

I lucked out because I had all the ingredients at home!

This is a great summer soup recipe that is easy to make and avoids heating up the house.

Plus you get to use up any leftover corn on the cob you happen to have hanging out in the refrigerator.

I also had a little leftover cooked white rice from the other day so I heated some up and added a couple of tablespoons to the bowl of Crock Pot Pork Black Bean Corn Soup I was enjoying for lunch the day I made this recipe.

The cooked white rice is optional but a tasty addition!

Ingredients

  • ½ pound ground pork, browned and drained well
  • 14 oz can diced tomatoes with green chilies
  • two 15 oz cans black beans, rinsed and drained well
  • 1 can corn kernels, drained well or 1 cup leftover corn on the cob cut from the cob
  • ½ cup diced bell pepper
  • small onion diced, about ½ cup
  • 2 cloves garlic minced
  • 32 oz beef broth
  • 1 teaspoon ground cumin
  • 2 to 3 teaspoons chili powder

Directions

  1. Brown the ground pork in a skillet and drain well. Add to a 6-quart crock pot.
  2. Add the canned diced tomatoes, black beans, and corn to the crock pot.
  3. Next add the diced bell pepper, diced onion, and minced garlic to the crock pot.
  4. Pour the beef broth in and mix well with a large spoon.
  5. Add the ground cumin and ground chili powder to the crock pot and stir to combine the spices with the rest of the ingredients.
  6. Place the lid on the crock pot and cook for 3 hours on high or 6 hours on low.
  7. Serve with cooked white rice if desired.
  8. Makes about 6 servings.

Ingredients  

  • ½ pound ground pork (browned and drained well)
  • 14 oz can diced tomatoes with green chilies

      Hi Chris

      Step #1 in the directions tells you to brown and drain the pork and add it to the crock pot. It is the first ingredient in.

    Trying this tonight but in the stock pot for a quicker cook because I needed something last minute but this sounds delish!!
