Chipotle Chicken Sub Avocado Aioli

We are big sandwich eaters in this house. We have sandwiches for dinner at least once a week. Oscar Mayer has a new line of Deli Fresh BOLD lunch meats that I couldn't wait to try. There are four new BOLD flavors to choose from.

The new flavors include, Italian Style Herb Turkey Breast, Cajun Style Turkey Breast, Maple Honey Ham, and Chipotle Season Chicken Breast. I made myself a Chipotle Chicken Sub with Avocado Aioli for lunch today.

I love the spicy flavor of chipotle with chicken. Even though I picked up a package of each of the new flavors to have on hand I couldn't wait to try the BOLD new flavor of Chipotle Season Chicken Breast.

You know what else I love about Oscar Mayer deli meat? Oscar Mayer Deli Fresh BOLD has no artificial preservatives, no artificial flavors and are gluten free.

This sandwich is easy to make but you will need to make the Avocado Aioli ahead of time.

For a Chipotle Chicken Sub you will need a package of the new Oscar Mayer Chipotle Season Chicken Breast, french bread, lettuce, tomato, avocado, cheese of choice (I didn't use cheese today) but I bet a pepper jack cheese would taste great on this sub and a batch of this easy homemade Avocado Aioli.

Make the Avocado Aioli sandwich spread recipe below. Cut open a piece of french bread, spread a tablespoon of the Avocado Aioli on the bottom and top piece of french bread.

Layer the Oscar Mayer Chipotle Season Chicken Breast, lettuce, tomato and avocado slices. Add cheese if desired and slather on some more Avocado Aioli if desired. Serve with a pickle, some chips and a glass of sweet iced tea.

How to make Chipotle Chicken Sub with Avocado Aioli

 Ingredients
  • 1 ripe but firm avocado
  • 3 tablespoons mayonnaise
  • 2 tablespoons olive oil
  • juice of half a lime
  • ½ - 1 teaspoon minced garlic
  • pinch - ¼ teaspoon ground red pepper flakes (to taste)
  • pinch of salt and pepper
Directions
  1. In a bowl with a fork mash the avocado.
  2. Add mayonnaise, lime juice, red pepper, garlic, salt and pepper.
  3. Whisk or beat with a hand-held mixer until creamy.
  4. Add the olive oil and beat on high for two minutes.
  5. Taste and adjust seasonings.
