All you need to do is season the chicken with a good fajita seasoning.
Ingredients
Chicken fajitas are really easy to make and you only need six ingredients and your favorite toppings.
- boneless skinless chicken
- fajita seasoning (store bought or try my Gourmet Fajita Seasoning Mix)
- sweet bell pepper
- a medium onion
- flour tortillas
- shredded cheese
- your favorite fajita toppings
Directions
Step 1: Cut boneless skinless chicken into ½ inch thin strips or cubes. Put the chicken into a bowl and sprinkle with fajita seasoning mix. Toss the chicken to coat the pieces with the seasoning mix.
Marinate the chicken for 20 to 30 minutes in the fajita seasoning.
Step 2: Heat 1 to 2 tablespoon of olive oil in a cast iron skillet over medium heat.
Sear all sides of the chicken over medium high heat for about 5 minutes.
Step 3: Push the chicken pieces to the side and add the sliced onion and bell peppers to the skillet.
Step 4: Toss to combine and continue cooking for another 3 to 5 minutes or until the chicken pieces are cooked through the center.
Step 5: Turn off the heat. Sprinkle the top with shredded cheddar cheese. Place a lid on the skillet and let the cheese melt before serving.
Step 6: Serve the fajitas with flour tortillas and your favorite toppings. See some of my favorite fajita toppings below.

- 1 tablespoon fajita seasoning (store bought or try my Gourmet Fajita Seasoning Mix - I like to use 1 ½ to 2 tbs.)
- 1 large sweet bell pepper (cored, seeded and sliced)
- 1 medium onion (peeled and cut into thin slices)
- 6 medium fajita size flour tortillas
- 1 cup shredded cheese
- your favorite fajita toppings
Instructions

- Marinate the chicken for 20 to 30 minutes in the fajita seasoning.
