I love making and using homemade ingredients that I make myself. I used dehydrated banana chips I dried myself for this recipe.

The homemade banana chips were the inspiration behind this homemade granola bar recipe.

My daughter loves to snack on granola bars. She needed an easy snack item she could pack and take to school and work with her so I whipped up these homemade Banana Chocolate Chip Granola Bars for her.

Homemade granola bars are very easy to make. All you do is mix all the dry granola ingredients in a large bowl and the wet granola ingredients in a small bowl, warm the wet ingredients and combine the wet and dry ingredients in the large bowl.

Spread it out in a shallow baking pan and bake.

Let them cool, slice them into bars and wrap them up in wax or parchment paper for an easy snack to pack in a lunch box.

Or store them in an airtight container.

How To Make Banana Chocolate Chip Granola Bars Recipe

Ingredients

  • 3 cups old-fashioned oats
  • 1 cup rice crispy cereal
  • 1 cup dried banana chips broken into bite-size pieces.
  • 1 cup mini chocolate chips
  • ½ cup creamy peanut butter
  • ⅔ cup corn syrup or honey
  • 1 teaspoon vanilla extract (I used my homemade vanilla extract)

Directions

  1. Preheat oven to 325 F..
  2. Prepare a 9 x 13 inch baking sheet by lining it with parchment paper leaving a slight over hang so you can easily remove the baked granola bars from the pan..
  3. In a large bowl mix the oats, rice cereal, banana chips and chocolate chips. Set aside.
  4. In a small bowl mix the peanut butter, corn syrup and vanilla extract. Warm in the microwave for 20 seconds.
  5. Pour the peanut butter mixture into the large bowl of dry ingredients.
  6. With a stiff spatula mix well until the wet ingredients are incorporated well with the dry ingredients.
  7. Pour the granola ingredients into the baking pan. Spread out evenly.
  8. Press the granola down into the baking pan. Tip use a piece of parchment paper to cover the top of the ingredients and press down firmly to compact the granola tightly. Discard the parchment paper once the granola is pressed into the baking sheet.
  9. Bake for 20-25 minutes for soft granola bars. Bake for 30-35 minutes for crunchy granola bars.
  10. Once baked remove the pan from the oven and cool on a baking rack for 15-20 minutes.
  11. After cooled carefully remove the granola from the baking sheet by picking it up by the over hanging parchment paper. Place the granola with parchment paper on a cutting board.
  12. Slice into 24 bars and let set for about 30 minutes to firm up before storing in an air tight container or individually wrapping them in parchment or wax paper.

  • Lining the baking dish with parchment paper makes it easy to remove the slab of granola from the pan without breaking it into pieces before cutting into bars.
  • Don't have banana chips? You can skip the banana chips or use raisins instead.
  • Moved the granola from the pan or tried cutting it before it cooled completely and it fell apart? Crumble the granola up and eat it like that or use it to top yogurt.
