If you love cheesy breakfast potatoes packed full of bacon and pork sausage then this is the breakfast casserole recipe for you!

Breakfast casseroles are the unsung heroes of the morning table, offering a mouth-watering solution to feed a crowd without spending hours in the kitchen.

The Amish Breakfast Casserole, with its rich layers of bacon, sausage, and cheese, nestled among fluffy eggs and hash browns, delivers a symphony of flavors that dance on your palate.

It's a recipe where the savory depth of meat marries the creamy, cheesy texture, creating a dish that's as pleasing to the eye as it is to the taste buds.

Breakfast casseroles are perfect for Sunday breakfast or when you are planning a brunch for a special occasion like Mother's Day.

Ham & Egg Casserole, English Muffin Breakfast Casserole and my personal favorite Velveeta Breakfast Casserole are always a big hit with my family.

Below is a quick look at the ingredients and directions. You can find the entire ingredient amounts and step by step directions in the recipe card below. P. S. You can also save your favorite recipes to your personal recipe box! ⬇️

Ingredients in bowls to make Breakfast Casserole.

This casserole is a canvas of classic breakfast favorites, each bringing its unique taste and texture to the table:

  • Bacon & breakfast sausage roll: These meats add a smoky, savory depth that's essential to the casserole's hearty flavor.
  • Diced hash brown potatoes: They provide a satisfying crunch and substance, making the dish more filling.
  • Seasonings: salt, ground black pepper, and garlic powder: These elevate the overall flavor profile, ensuring every bite is as delicious as the last.
  • Large eggs: The backbone of any casserole, eggs bind the ingredients together while adding a fluffy texture.
  • Dairy: cottage cheese, sour cream, shredded medium cheddar, shredded Swiss cheese. These contribute to the creamy, gooey texture that makes the casserole irresistibly good.

👇See the step by step directions below!

Prep Work for Perfection

  • Begin by cooking the bacon in a skillet until crispy. Drain on paper towels.
  • Cook the sausage in the same skillet, breaking it into crumbles. Drain well.
  • Thaw the hash brown potatoes and preheat your oven to 350°F.
  • Grease a 9x13 baking dish.

Step-By-Step Directions to Create a Memorable Breakfast

  • Step 1: In a large bowl, whisk together the eggs, cottage cheese, and sour cream. For a smoother texture, blend this mixture in a blender until the cottage cheese lumps are gone.

  • Step 4: Pour into the greased 9 x 13 baking dish, bake for 45 minutes, then top with the remaining cheddar and bake until melted.

Optional Add-ins

  • Chopped bell peppers
  • Sautéed mushrooms
  • Diced tomatoes
  • Spinach leaves

Adding optional ingredients such as chopped bell peppers, sautéed mushrooms, diced tomatoes, or spinach leaves not only introduces vibrant colors and textures to the casserole but also boosts its nutritional value.

Storing or Freezing Leftovers

Cool completely, then cover or transfer to airtight containers. Refrigerate for up to 3 days. To reheat, cover with foil and bake at 350°F until warmed through.

This casserole once it has been cooked freezes very well. Simply wrap tightly in plastic wrap and then foil before freezing. Thaw overnight in the refrigerator before reheating.

Freeze portions for up to 2 months, reheating in the oven or microwave until hot.
